    Hi Jenn,

    I am trying to find the name of spices you use. I believe there are three of them but I can’t remember the name of the company. I think there’s a truffle, Cajun and can’t remember the third one. Would you be able to let me know?

    OK, here goes, I made your Broccoli Cheddar Cottage Cheese Quiche, but with a few twists. First, I used about 2 tsp of minced garlic instead of mincing it myself (sorry, am a bit lazy). The cheese I used was Mexican blend cheddar and mozzarella. I also added pre-cooked bacon crumbles -about a cup. The biggest change though was that I cooked it in a waffle iron instead of using pie crust. Don’t get me wrong, I love pie crust, but it doesn’t like my waistline. I did one final experiment with the last one, I added a pinch of thyme- definitely worthwhile- wish I added it at the beginning. Lastly- it seemed a bit dry using the waffle iron. My solution, Tabasco sauce to dip each bite in. My wife’s solution (she can’t even eat black pepper- which I excluded in the recipe btw) Hollandaise sauce, and loved it. That’s it, the great experiment for the morning is over. Thanks so much for your recipe- we loved it. (PS, I have pictures- where do I put them?)
