Hi and happy May! As we roll into the first full week of a new month, I have almost a month’s worth of lunch ideas for you. It’s a great mix of sandwiches, bowls, salads and wraps. I hope you enjoy and find some inspiration for your midday meal!
Open-faced chickpea salad sandwich on toasted sourdough with chopped cucumbers, tomatoes and kalamata olives.
- 1 can of chickpeas, drained and roughly mashed
- 1 tbsp mayo
- 1 tbsp plain greek yogurt or sour cream
- Squeeze of lemon juice
- Sprinkle of greek seasoning or dried parsley
- Salt to taste
Two fried eggs on toasted sourdough with salted butter and mashed avocado. Sumo mandarin on the side. The sumo season is coming to a close and I’m going to be so sad to say goodbye!

Open-faced turkey sandwich on sourdough with mayo, avocado, bacon, Grillo’s dill pickle chips and pepper jack. Put it under the broiler to heat the sandwich and melt the cheese.

Turkey sandwich on a croissant (Finn’s on a croissant kick so I buy them at the deli pretty often). Mayo, fig preserves, avocado, turkey, cheese. Chips and strawberries on the side.
Avocado toast on sourdough, hardboiled eggs and grapes.
Bagged truffle caesar salad kit, add tomatoes and air-fried chicken nuggets. Croissant on the side.
Another version of the open-faced turkey sandwich but on my dad’s sourdough. The melty cheese + dill pickle combo is tasty!
Grain bowl with a lentil + barley ready to heat and eat pack from Whole Foods, beets, leftover chicken breast, shredded white cheddar cheese, hummus and avocado. I need to do more grain bowls like this for lunch to switch it up!

Wrap with turkey, spinach, avocado, mayo, an apple pie spread from Trader Joe’s (could also just use apple butter) and cheese. Cooked in a cast iron skillet with butter and a grill press.

PB + banana this time! With honey and sea salt on honey wheat bread. The regular Trader Joe’s creamy natural salted peanut butter is my all-time favorite. It tastes amazing and the texture is 100!
