Cookies And Babies

Monday has been a much better day. Full of work, yoga privates, babies and cookies. That’s good stuff.

I was up early to put together a meal for Caitlin. She just had a baby boy and I offered to bring them dinner. Nothing like sauteing onions and baking cookies at 7 a.m.!

Cooking for other people is one of my very favorite things to do. I made Southwestern stuffed sweet potatoes, a salad with homemade vinaigrette and flourless peanut butter chocolate chip cookies.

These cookies are my new favorite thing to bake. I think I’ve made them at least five times in the last two months. They only have a handful of ingredients and require one bowl and no mixer!

Flourless Peanut Butter Chocolate Chip Cookies

1 cup natural salted peanut butter (smooth or chunky)
1/2 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla
1 egg
1/2 cup chocolate chips
Kosher/sea salt to finish

Preheat oven to 350 degrees. Mix together peanut butter, sugars, vanilla, egg and chocolate chips. I like to use a fork. Roll cookies into a ball (a little more than a tablespoon per cookie) and place on baking sheet. Gently flatten with fork, making a criss cross pattern and then sprinkle with kosher or sea salt. Bake for about 9-12 minutes or until puffy and slightly golden. I like to take mine out a little before they seem ready so that they are extra chewy.

Warning: addictive and WAY too easy.

I’m still off of oatmeal and Greek yogurt so breakfast while I was cooking was an egg scramble. Spinach, grape tomatoes, goat cheese an egg and diced avocado. Kiwi on the side.

I came home for a very late lunch after a morning at work and a midday workout. I did a tough strength circuit so I wanted a protein-centric lunch. I made a salad out of Saturday night’s leftovers. Mixed greens topped with mushroom whole wheat couscous and chopped stuffed chicken. And then I ate a cookie.

I taught a yoga private this afternoon and delivered Caitlin’s dinner. Now I’m about to lead a strength/stability/core/mobility clinic for the American Cancer Society’s DetermiNation marathon training team. I can’t wait to tell y’all all about it tomorrow.

But first…

I keep buying these cheap Sony headphones over and over again and they never last for more than 2-3 months before one of the ears will lose sound. It’s frustrating. Can someone recommend quality headphones that stay in during all types of workouts (running, lifting, jumping around, etc.). Please?

Hope it was a great Monday!

  • tiffany June 25, 2012, 7:20 pm

I have headphones that wrap around your ear, so they never fall out! Mine are Philips brand and i found them for $7 or $8 at Marshall’s. 😀

I need to have a baby so you can come cook me dinner 🙂

  • Whitney @ Whit Likes Fit June 25, 2012, 7:27 pm

I do the same thing with those headphones. Just got a new pair in the mail Friday. I love having them hook into my ears but hate how they always stop working after a few months.

  • Jen June 25, 2012, 7:30 pm

I love my Nike Vapor headphones! I’ve had them a long time (more than a year) and haven’t had any problems. http://store.nike.com/us/en_us/?l=shop,pdp,ctr-inline/cid-1/pid-423502/pgid-464784&cp=USNS_KW_0611081618

The Jaybird Freedom’s are great. They’re bluetooth and hook around your ears. They’re pricey – but worth it! jaybirdgear.com

i absolutely LOVE my phillips action fit headphones – they’re waterproof, never move no matter what workout i do, and the sound quality is unbelievable! http://www.amazon.com/Philips-ActionFit-SHQ4000-28-Headphones/dp/B004477D0K

also, the dinner and cookies look amazing!! as do your meals, as usual!!

Oh my goodness, Jen! I was just having the same thought. I have the same headphones that I keep buying over and over, and they are awful. I’ve been meaning to research a good pair of sport headphones. I’m excited to hear what your readers say! I adore your blog and you inspire me for your balance and strength! Wishing you a great week ahead!

  • Elese June 25, 2012, 7:53 pm

Buy a pair of yurbuds. They are AMAZING!! Stay in when you run/sweat and are very comfortable. I have the cheaper version, which work great. I bought my Dad a pair at Best Buy, but you can also order them online at yurbuds.com. Hope you try them!

And those cookies look amazing 🙂

  • Miriam@Bellaspire June 25, 2012, 8:03 pm

That meal looks so beautiful! How thoughtful of you- I’m sure Caitlin was so excited!!! I’m seriously debating whether or not I should hop off the couch and make those cookies…. they look so easy and so good!

  • Aly June 25, 2012, 8:04 pm

Go to an audiologist and get custom molded plugs/phones – they are custom shaped to your ear canals and are SO comfortable. Pricy, but worth it and last a long time. I’ve have mine for years.

  • Alaina June 25, 2012, 8:10 pm

Once David and I have children, we’ll move to Charlotte. 😉

I have head phones that wrap around my ears and have ear buds. I think I got them at City Sports, but not sure of the brand. I love them!

Bose Mie2i (or Bose Mie2 if you don’t have an iphone) headphones are INCREDIBLE!

  • Meghan @ Run With Meg June 25, 2012, 8:32 pm

I bought some skullcandy ones that go around your ear. They are called skullcandy sport or active or something. They are awesome and they cost less than $10 at TJ Maxx or Marshalls.

  • Laura June 25, 2012, 8:59 pm

yummy looking meal!! do you have that sweet potato recipe up on your recipe blog?? id love to make it!!! as far as headphones, invest in an expensive pair that are buds…worth it!!

  • Taylor June 25, 2012, 9:01 pm

skull candy headphones are THE best. they have just the right smushiness to be comfy but are also sturdy enough to stay in your ears. they also arent that expensive, you can get them pretty much anywhere. AND they come in fun colors!! i love them!!

  • AJ June 25, 2012, 9:04 pm

I have these Bose headphones: http://www.bose.com/controller?url=/shop_online/headphones/audio_headphones/in_ear_headphones/index.jsp. I have small ears so most standard earbuds are too big (and end up hurting/itching/falling out). These are pricy but they last wayyyy longer than anything else, and Bose has great customer service (they replaced mine when the left bud broke after about 3 years – I just had to ship mine back)

  • Chris K June 25, 2012, 9:13 pm

  • Cheryl @ happy is the new healthy June 25, 2012, 9:50 pm

I’d be all over those cookies. YUM.

I always buy cheap headphones but never the same kind. I’ve yet to find a pair that I like that stay in my ears when I get uber sweaty. I usually lose them, so even though I’ve been told some great suggestions on which to buy I am hesitant to cash out!

  • Holly June 25, 2012, 10:03 pm

I had the exact same problems before I found these. The only time they’ve ever fallen out was on a long run when it was like August and 90+ degrees out. Otherwise they are solid.

  • Laura June 25, 2012, 10:26 pm

I wear the exact headphones… In fact I was just telling my husband how i’ve probably spent a couple hundred dollars buying the cheap $10 headphones from target every 4-6 months!… I have small ears and I don’t like the most of the stuff out there– i’ve never found anything I really like.

  • Kim June 25, 2012, 11:20 pm

I love my Yurbuds! I caved when they had me try them out last year at the rock n roll Denver expo….and found myself wearing them for the first time the next day for all 13.1 miles! They’re so comfy that I forget that I’m wearing them and they definitely stay put! I love them and would highly recommend them regardless of the price. I have the $50 pair…But like another commenter said…there are cheaper versions out there for like $20-30

  • Sandra June 25, 2012, 11:33 pm

The absolute best headphones I have ever had are these:

Sennheiser – Adidas Sports Behind-the-Neck Headphones
They are ridiculously good and have held up almost a year through long runs and all types of physical activity. My ears had to initially get used to the shape but once they did, it was all smooth sailing after that. BTW, I want those peanut butter cookies right now. I tend not to make fresh cookies because I cannot be trusted with fresh-from-the-oven baked goods. I know that one can wait until they cool and freeze them in individual portion sizes, but the warmth and the yumminess of them right out of the oven means that very few will end up cool enough to put in the freezer. Gah!

  • Lisa June 25, 2012, 11:50 pm

My favourite headphones by far are skull candy. The meal you made looks beautiful, how thoughtful of you.

  • Danielle June 25, 2012, 11:59 pm

Do you have the recipe for the taters? Look so good!!!!:)

  • Corrie Anne June 26, 2012, 12:22 am

those stuffed sweet potatoes look so awesome!!! i always buy cheap headphones because i always lose them!

  • Erica { EricaDHouse.com } June 26, 2012, 6:21 am

That clinic sounds so interesting! Your cookies look amazing as well, and tres dangerous to have around the house!

  • Benthe June 26, 2012, 8:02 am

I love Sennheiser earphones, the quality of the music is just so good with them! I have normal ones which stay in my ears just fine, but they also work together with adidas. You should try those!?

  • Pam June 26, 2012, 8:18 am

    Hey Jen!
    The meal looks so yummy!
    I’m making those cookies today!
I use noise canceling Shure ear buds? They fit, stay in place, withstand sweat, and cancel background noise so I can zone out! They are pricy but worth it.

  • Blakely @ The Husky Life June 26, 2012, 8:40 am

Those sweet potatoes look awesome! Can you post the recipe for those?

  • kate June 26, 2012, 8:58 am

i use those same sony headphones and have forever – but you’re right, they need replacing quite often!!! please share what you end up replacing them with!!

  • Kristen June 26, 2012, 9:14 am

Your meal looks fabulous (as do all of your creations!)

I used to have skull candy earbuds and had the same problem. One of the ears would lose sound and I’d go buy another pair.

I’ve now invested in yurbuds and they are AMAZING. I won’t ever buy another pair. They are great!

  • Stephanie June 26, 2012, 9:28 am

I have the same headphones and have a love-hate relationship with them. On the one hand, they seem relatively cheap and mine do the same thing with one ear just ceasing to work. On the other hand, I love the style and they are pretty indestructible. I like a “headband” style because it helps keep my hair (especially those annoying baby hairs) off my face and I like having ear buds so the music’s IN my ears, not on them. I can’t wear the traditional ear buds that come with iPods, and I don’t like the wrap style (my husband has those and they just aren’t comfortable for me). So I basically figure these headphones aren’t that expensive and I can afford to replace them as needed. It’s worth it to me since I like the style so much.

  • margaret June 26, 2012, 9:34 am

yurbuds are awesome! best things ever

  • Sarah June 26, 2012, 9:41 am

Philips earbuds are great because they wrap around your ear and stay in place. I’ve used them in four marathons and all sorts of gym workouts and they don’t move (I think they are about $20 in Target).

  • Tanya June 26, 2012, 10:09 am

so….what’s in the potatoes? they look yummy!!!

  • Susanne Hyde June 26, 2012, 10:11 am

Will you share that stuffed sweet potato recipe? 🙂

  • Robin June 26, 2012, 10:20 am

I know your problematic headphones are Sony, but I have a pair of Sony headphones that I got at Wal-Mart and I LOVE them. They wrap around each ear (as opposed to going behind the head) and they neverrr fall out! I use them for cardio and lifting mostly, but they really are great. Here’s a link: http://www.amazon.com/Sony-MDR-AS20J-Active-Headphones-Hangers/dp/B0015AHRFK/ref=sr_1_2?ie=UTF8&qid=1340720267&sr=8-2&keywords=sony+athletic+headphones

  • Maggie June 26, 2012, 10:25 am

I have these (http://www.amazon.com/Sennheiser-PMX-680-Sports-Headphones/dp/B0034L3G8U/ref=dp_ob_title_ce) headphones that I’ve used for all types of workouts (running, gym, even walking around NYC) for years and they’ve held up really well. My only complaint is that they don’t get that loud. All of my other headphones that I use in my daily life (walking around NYC) break after a few months. I used to buy expensive ones, but now I think I’m better off buying cheap ones and just replacing them since they all seem to lose sound in one year!

I just bought these (http://www.bestbuy.com/site/Sennheiser+-+Adidas+Ear-Clip+Headphones/9661236.p?id=1218140275821&skuId=9661236) for my boyfriend. He runs all the time and has gone through many headphones, whether they don’t stay in his ears or the sweat ruins them. I have heard lots of good things about these so I hope he likes them!

  • deepsouthrunner June 26, 2012, 11:11 am

Those southwestern sweet potatoes look amazing!
I use flexible earhook headphones by Phillips for running, got them from WalMart for about $10? They have them in different colors and I’m on my 2nd pair – the first pair lasted a least a year before they started getting gross from my sweat 🙂

  • henley June 26, 2012, 11:19 am

please post the recipe for the stuffed sweet potatoes – they look amazing!!

  • Jaime D. June 26, 2012, 11:28 am

I use JVC – Sport Clip Earbud Headphones and they work great. They never fall out of my ears. You can find them at any Best Buy or BestBuy.com.

  • Salina June 26, 2012, 1:05 pm

Have you ever tried Yurbuds…a bit pricey, but worth it for me…they stay in, i’ve had them about a year and haven’t had any problems! Good luck!

  • Eva June 26, 2012, 1:30 pm

would love a recipe for the sweet potatoes!!

  • Jessica June 26, 2012, 3:15 pm

    Hi Jen,

I was having the same issues with headphones and did a lot of research trying to find the perfect pair. I ended up purchasing Yurbuds. There were designed by an ironman and can even be sized to your ear. I’ve been running with them since Christmas and they have worked our perfectly, not to mention never fallen out!

    I highly recommend: http://yurbuds1.reachlocal.net/?utm_source=ReachLocal&utm_medium=PPC&utm_campaign=Search

    Good luck!

  • Your breakfast looks unreal, I love eggs and avocados! I have the same problem as you with headphones so no suggestions but you aren’t alone! Just this morning they were falling out of my ears mid-burpees and I was not very happy! Looking forward to seeing everyone’s suggestions 🙂

  • Marla-Deen June 26, 2012, 3:48 pm

Earbuds are the way to go!! I wrote about these as they are the best! I always get so sweaty my headphones won’t stay in my ears, but these little things slip over the tip of my IPod headphones and won’t come out of my ears – no matter how sweaty I get or how much I jump around. They are about $20 but well worth it!

  • Hillary June 26, 2012, 4:26 pm

Can you post the recipe for the sweet potato dinner you made for Caitlin ?!

I’d also love the potato recipe as well:)

  • Emily June 26, 2012, 11:35 pm

Oh yes! Sweet potato recipe, please!!

I have Yurbuds (Ironman Inspire Talk) and they are AMAZING. I bought mine a year and a half ago and they are still as good as new! Highly recommend them 🙂

  • Jen June 26, 2012, 11:45 pm

    Hi Jen,

Can I ask why you’re off the Greek yogurt thing? Are you following a specific diet and why? If I can ask! 🙂

  • suze June 27, 2012, 2:43 pm

I bought these JVC headphones at Best Buy and have been super happy with them.
    Why I like them –
They stay in place – running & weight lifting – and fit comfortable.
    They are purple.
The sound is amazing (I had Phillips ones that lost sound in one speaker but there was no comparing sound quality) – anything with bass just bumps!
The cord doesn’t get super tangly.
Price isn’t out of sight. $20.

  • Dawn June 29, 2012, 5:14 pm

I use Nixon ear buds. They never fall out.

  • Tyler June 29, 2012, 7:17 pm

I buy the same headphones. Yes, they need to be replaced every 3 months, but 4 a year is still cheaper than buying a super expensive pair. They are comfy and stay put so I wouldn’t try to find something else. There is a reason they are cheap! Just buy 3 at a time and there is no problem!

  • Shashi @ http://runninsrilankan.com July 16, 2013, 11:49 am
