Cookies And Babies

Monday has been a much better day. Full of work, yoga privates, babies and cookies. That’s good stuff.

I was up early to put together a meal for Caitlin. She just had a baby boy and I offered to bring them dinner. Nothing like sauteing onions and baking cookies at 7 a.m.!

Cooking for other people is one of my very favorite things to do. I made Southwestern stuffed sweet potatoes, a salad with homemade vinaigrette and flourless peanut butter chocolate chip cookies.

These cookies are my new favorite thing to bake. I think I’ve made them at least five times in the last two months. They only have a handful of ingredients and require one bowl and no mixer!

Flourless Peanut Butter and Chocolate Chip Cookies

Ingredients

Scale
  • 1 cup natural salted peanut butter (smooth or chunky)
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 cup chocolate chips
  • Kosher/sea salt to finish


Instructions

  1. Preheat oven to 350 degrees.
  2. Mix together peanut butter, sugars, vanilla, egg and chocolate chips. I like to use a fork.
  3. Roll cookies into a ball (a little more than a tablespoon per cookie) and place on baking sheet. Gently flatten with fork, making a criss cross pattern and then sprinkle with kosher or sea salt.
  4. Bake for about 9-12 minutes or until puffy and slightly golden. I like to take mine out a little before they seem ready so that they are extra chewy.

Warning: addictive and WAY too easy. 

I’m still off of oatmeal and Greek yogurt so breakfast while I was cooking was an egg scramble. Spinach, grape tomatoes, goat cheese an egg and diced avocado. Kiwi on the side.

I came home for a very late lunch after a morning at work and a midday workout. I did a tough strength circuit so I wanted a protein-centric lunch. I made a salad out of Saturday night’s leftovers. Mixed greens topped with mushroom whole wheat couscous and chopped stuffed chicken. And then I ate a cookie.

I taught a yoga private this afternoon and delivered Caitlin’s dinner. Now I’m about to lead a strength/stability/core/mobility clinic for the American Cancer Society’s DetermiNation marathon training team. I can’t wait to tell y’all all about it tomorrow.

But first…

I keep buying these cheap Sony headphones over and over again and they never last for more than 2-3 months before one of the ears will lose sound. It’s frustrating. Can someone recommend quality headphones that stay in during all types of workouts (running, lifting, jumping around, etc.). Please?

    I have headphones that wrap around your ear, so they never fall out! Mine are Philips brand and i found them for $7 or $8 at Marshall’s. 😀

    I do the same thing with those headphones. Just got a new pair in the mail Friday. I love having them hook into my ears but hate how they always stop working after a few months.

    Buy a pair of yurbuds. They are AMAZING!! Stay in when you run/sweat and are very comfortable. I have the cheaper version, which work great. I bought my Dad a pair at Best Buy, but you can also order them online at yurbuds.com. Hope you try them!

    And those cookies look amazing 🙂

    Go to an audiologist and get custom molded plugs/phones – they are custom shaped to your ear canals and are SO comfortable. Pricy, but worth it and last a long time. I’ve have mine for years.

    I have head phones that wrap around my ears and have ear buds. I think I got them at City Sports, but not sure of the brand. I love them!

    I bought some skullcandy ones that go around your ear. They are called skullcandy sport or active or something. They are awesome and they cost less than $10 at TJ Maxx or Marshalls.

    skull candy headphones are THE best. they have just the right smushiness to be comfy but are also sturdy enough to stay in your ears. they also arent that expensive, you can get them pretty much anywhere. AND they come in fun colors!! i love them!!

    I’d be all over those cookies. YUM.

    I always buy cheap headphones but never the same kind. I’ve yet to find a pair that I like that stay in my ears when I get uber sweaty. I usually lose them, so even though I’ve been told some great suggestions on which to buy I am hesitant to cash out!

    Yurbuds.

    I had the exact same problems before I found these. The only time they’ve ever fallen out was on a long run when it was like August and 90+ degrees out. Otherwise they are solid.

    I wear the exact headphones… In fact I was just telling my husband how i’ve probably spent a couple hundred dollars buying the cheap $10 headphones from target every 4-6 months!… I have small ears and I don’t like the most of the stuff out there– i’ve never found anything I really like.

    I love my Yurbuds! I caved when they had me try them out last year at the rock n roll Denver expo….and found myself wearing them for the first time the next day for all 13.1 miles! They’re so comfy that I forget that I’m wearing them and they definitely stay put! I love them and would highly recommend them regardless of the price. I have the $50 pair…But like another commenter said…there are cheaper versions out there for like $20-30

    I love Sennheiser earphones, the quality of the music is just so good with them! I have normal ones which stay in my ears just fine, but they also work together with adidas. You should try those!?

    I’m making those cookies today!
    I use noise canceling Shure ear buds? They fit, stay in place, withstand sweat, and cancel background noise so I can zone out! They are pricy but worth it.

    I used to have skull candy earbuds and had the same problem. One of the ears would lose sound and I’d go buy another pair.

    I’ve now invested in yurbuds and they are AMAZING. I won’t ever buy another pair. They are great!

    Philips earbuds are great because they wrap around your ear and stay in place. I’ve used them in four marathons and all sorts of gym workouts and they don’t move (I think they are about $20 in Target).

    Those southwestern sweet potatoes look amazing!
    I use flexible earhook headphones by Phillips for running, got them from WalMart for about $10? They have them in different colors and I’m on my 2nd pair – the first pair lasted a least a year before they started getting gross from my sweat 🙂

    I use JVC – Sport Clip Earbud Headphones and they work great. They never fall out of my ears. You can find them at any Best Buy or BestBuy.com.

    Have you ever tried Yurbuds…a bit pricey, but worth it for me…they stay in, i’ve had them about a year and haven’t had any problems! Good luck!

    Your breakfast looks unreal, I love eggs and avocados! I have the same problem as you with headphones so no suggestions but you aren’t alone! Just this morning they were falling out of my ears mid-burpees and I was not very happy! Looking forward to seeing everyone’s suggestions 🙂

    Earbuds are the way to go!! I wrote about these as they are the best! I always get so sweaty my headphones won’t stay in my ears, but these little things slip over the tip of my IPod headphones and won’t come out of my ears – no matter how sweaty I get or how much I jump around. They are about $20 but well worth it!

    I buy the same headphones. Yes, they need to be replaced every 3 months, but 4 a year is still cheaper than buying a super expensive pair. They are comfy and stay put so I wouldn’t try to find something else. There is a reason they are cheap! Just buy 3 at a time and there is no problem!
