Recent Eats + All the Ice Cream

I’ve cried some tears today. First over my sweet boy getting shots for the first time. Second over the kindness of other women…this one deserves a post all of its own. Coming soon.

Finn has been sleeping on me in the Ergo all afternoon. He’s breaking my heart! Everyone who told me that having a child is like having your heart walking around outside of your body was so very right.

I’m going to lighten up the content today with some recent eats. Enjoy.

BREAKFAST

scrambled eggs and avocado toast

Scrambled eggs, avocado toast on homemade bread and cherries.

yogurt, fruit and granolaPlain yogurt, honey, bananas, granola, blueberries, strawberries and peanut butter.

smoothie

Smoothie with spinach, bananas, blueberries, raspberries, strawberries, a medjool date, fish oil, collagen powder, peanut butter and almond milk.

LUNCH

This was a kale salad kit from Publix to which I added strawberries, blueberries, turkey and avocado.

Turkey, avocado and cheese and watermelon.

The other half of the kale salad with leftover salmon and half and avocado.

Turkey sandwich with avocado, tomato and arugula on an Ozery OneBun. I ran into a friend of mine while I was shopping at Whole Foods and spotted these sandwich thins in her cart. She told me they were good so I decided to give them a try. I like them a lot and it’s been a nice change from regular bread.

DINNER

Southwestern Shrimp Taco Salad

Southwestern shrimp taco salad. My parents made this for dinner one night while I was visiting and it’s so good! I actually have the recipe on my blog.

Baked Salmon

Baked salmon with steamed rice and sauteed squash.

Pasta Bolognese

Pasta with bolognese sauce. My dad cooked the sauce and let it simmer all afternoon and it was delicious.

Chicken and roasted vegetables

Chicken leg/thigh from a rotisserie that I got at Whole Foods along with roasted broccoli, potatoes and mushrooms. I ate this two nights in a row when I got back from Florida.

Jeni's Salty Caramel Ice Cream

I’m like give me all the ice cream right now. I’ve been eating it every night. This was Jeni’s Splendid Ice Creams Salty Carmel.

Haagen Dazs

And when I was in Florida I ate these Haagen-Dazs flavors every night. The trio is just okay, the caramel cone is where it’s at. I love it!

Random related note…I was talking to my mom about how all the ice cream shops closed when build-your-own froyo got so popular. Now most of the froyo places are out of business and ice cream is having its day again. We actually have a Jeni’s Splendid Ice Creams opening in Charlotte in August! I fully admit that I was on the froyo bandwagon when it was at the prime of its popularity but ice cream is definitely better in my book…there is no comparison. 🙂
