10 from the Weekend

It was a perfectly rainy, quiet and cozy weekend. I left the house only two times…once to search for batteries which turned into an ice cream run as I blogged about on Friday night and once to meet a friend for a mani/pedi on Saturday. I never left my house today (Sunday) and stayed in my PJs until 2:30 p.m. It was just what I needed.

I was so fortunate not to lose power during all the crazy rain and wind that we experienced this weekend due to Hurricane Florence. Here in Charlotte, we avoided any major damage but we are praying for our coastal neighbors who endured a much worse burden from the storm.

Here are 10 photos from my “hunker down hurricane” weekend.

Friday night rice bowl with steamed basamati rice, feta, roasted broccoli, kimchi, a fried egg and a veggie burger.

Ice cream + Netflix + a cute baby.

Finn practiced his “happy baby” pose for the first time on Saturday morning. I like to think it’s due to his outfit! 🙂

Zoey was EXTRA needy for attention this weekend since we were unable to go walking or play outside.

Easy Saturday dinner featuring Trader Joe’s Cauliflower Rice Stir Fry Blend. To it I added ground turkey, sauteed mushrooms and two scrambled eggs. I flavored it up with some soy ginger sauce from Whole Foods, soy sauce and Sriracha.

Sunday morning playtime for the whole crew.

A pretty salad for lunch. Arugula tossed with lemon juice, olive oil, sea salt and honey, pears, avocado, dried cherries, feta, chick peas, tomatoes and cashews.

On Sunday afternoon I made my first pot of chili. The rainy weather seemed perfect for it. It had ground turkey, sweet potatoes, black beans and yellow peppers. The house smelled so good! Similar recipe here.

Afternoon cupcake while working on the manual for my upcoming 200-hour yoga teacher training. This cupcake was peanut butter overload. Mother’s milk tea on the side.

The weekend ended with a big bowl of chili, lots of baby cuddles and HGTV.

That wraps it up!

Have you cooked chili yet this month? Do you think it’s a fall/winter food or do you eat it all year?

Favorite chili recipe?

Moab Run The Rocks Race Recap (3 Day Stage Race)

I cannot believe it’s been nearly a month since I completed Moab Run The Rocks! It’s a three-day stage race in Moab, Utah that’s put on by the same race organization, TransRockies Rockies Race Series, that I did my six-day Colorado race with back in August. TransRockies truly excels when it comes to planning and [...]

Potato and Broccoli Cheddar Soup

Potato and Broccoli Cheddar Soup

This potato and broccoli cheddar soup is a warm hug in a bowl. It’s a mash up of potato soup meets broccoli cheddar soup, and makes for a creamy, hearty and cheesy bowl that has just enough broccoli in it to make you feel like you’re getting your veggies in for a complete meal. POTATO [...]

Goodbye Sweet Zoey

I am sitting down to write this post with teary eyes and a heavy heart. On New Year’s Eve we said goodbye to Zoey. It seems like only yesterday that I brought this fluffy nugget home. Many of you have been here with me since Zoey was a puppy. She was the sweetest little sister [...]
