A few weeks ago I asked if you guys preferred weekly recent eats posts or a bigger monthly recap. The vote was strongly in favor of weekly so I’ll keep going with every 7-10 days like I have for several years now. I’m just happy to hear that so many find these posts to be helpful. 🙂

Here’s a look at what I’ve been eating the past couple of weeks!

BREAKFAST

I’m loving bagels, scrambled eggs and fruit. I always buy the Dave’s Killer Bread bagels, Plain Awesome and Cinnamon Raisin Remix are my favorite flavors. Finn likes them a lot too. Related: I just listened to How I Built This with Dave Dahl and it was a great episode. I really, really respect companies that give a second chance to those with criminal backgrounds.

Smoothie bowls always. This combination of frozen banana, strawberry, mango, cauliflower rice, FAGE Total 5% plain, a medjool date, unsweetened vanilla almond milk, almond butter and Purely Elizabeth original granola was perfection.

As was this pretty purple combo of frozen cherry, blueberry, strawberry, cauliflower rice, FAGE Total 5% Plain, a medjool date, unsweetened vanilla almond milk, peanut butter and Purely Elizabeth chocolate peanut butter granola.

Rounding out breakfast with one more bagel, egg and fruit combo.

LUNCH

Mostly sandwiches. I did stray away from turkey for a PB+B. This combo is forever one of my faves. Especially made with salted natural PB and a little honey.

I did add some flair to my turkey sandwiches last week with pimento cheese instead of cheese slices. YUM! I know I keep sprinkling this in but I get asked a lot about what Finn is eating. He liked pimento cheese a lot.

DINNER

Salmon that I baked with a sauce that was a mix of maple syrup, lime juice, fish sauce and sriracha. Roasted sweet potatoes and roasted cauliflower on the side.

Rotisserie chicken with steamed brown rice cooked in coconut oil and a side salad.

Baked salmon cooked simply with salt, pepper and a spice rub. Roasted potatoes and sauteed shredded brussels with shallots and balsamic on the side.

Rice bowl with leftover sauteed shredded brussels, rotisserie chicken, avocado, feta, pistachios and a drizzle of ranch.

One more leftovers creation with spinach and arugula, quinoa, sauteed zucchini, avocado, pistachios and ranch. Some of you probably think this looks good and some probably think it looks a little weird. I just have to say that this combo really worked. Trust me on this one.

Veggie packed turkey meatloaf with a mashed sweet potato with butter and a side salad.

ETC

I needed a snack one day but I wanted something savory that was not chips or hummus. I ended up with this bowl of quinoa, tomato, avocado and cottage cheese. Hit the spot and kept me satiated until I could eat a late dinner.

I have been on a pie kick since my mom visited. She loves pie and we got a peach praline pie from The Fresh Market to enjoy for dessert. Well, I couldn’t stop thinking about this pie so I bought another one. Haha. I ate half of it and then froze individual slices to pop out of the freezer when I’m in the mood for dessert but don’t want to commit to a whole pie again.

Vanilla ice cream with chocolate syrup. A warm peanut butter chocolate chip cookie on the side.

That wraps up this edition of recent eats. My next one will include what I ate in Florida, which I know y’all always like to see since our family meals are pretty delish!
