Travel Week Eats

I hope your Monday is off to a great start. I’m getting myself settled and ready for my first full week in Charlotte in several weeks. It’s also my first week back to my regular teaching schedule due to a forced four-week break after my toe surgery. You can find my current teaching schedule here.

I’m really looking forward to my classes this week, and this coming weekend I’ll be graduating my Charlotte Yoga teacher trainees from their 200-hour program! 🙂 FYI if you’re in the Charlotte area, the studio just underwent some awesome renovations and improvements last weekend so be sure to stop in for a class soon.

Alrighty, today’s eats post is a collection of things I ate during my travels to Tennessee and Florida.

BREAKFAST

panera oatmeal

Oatmeal from Panera. I asked for a side of peanut butter (I knew they had it because they make kids PBJ) and they gave it to me for free!

This was my first time trying Quaker’s overnight oats cups. I appreciate that they make a super basic, unsweetened option with very few ingredients. Overnight oats are so easy to make at home so I wouldn’t pay for these cups at home but they’re a good option to grab for an easy travel breakfast.I added milk, a container of FAGE 5% peach yogurt and some peanut butter.

Breakfast almost always seems wrong if there’s not a bagel or toast of some sort included but on this day I just wanted eggs and fruit.

This is much more realistic when it comes to my breakfast choice. Leftover bacon and cheese quiche, half a Dave’s Killer berry bagel and berries.

Homemade plain yogurt, homemade granola, berries, bananas and almond butter.

LUNCH

I ate this for lunch both days in Tennessee. It was a sweet kale salad kit add avocado, grapes, hardboiled eggs and smoked turkey.

I didn’t take photos of my lunches in Florida because I ate sandwiches every day but one afternoon my mom and I grabbed lunch while we were out. I had lots of chips and salsa and some delicious fish tacos!

On this day Finn discovered his love for cheese quesadillas. Related, how do you stop yourself from eating your child’s leftovers. Haha.

DINNER

I picked up this pizza from Pie Five one night while I was in Tennessee. It was Italian sausage, sun-dried tomatoes, artichoke hearts and olives.

The first night we arrived in Florida my dad made a bacon and cheese quiche for an easy dinner. I had a salad on the side.

This dinner my dad made was different and really good! He made a grilled beef kofte with tahini yogurt sauce from Cook’s Illustrated. They recommended serving it with a corn and tomato salad for a summer spin on kofte and pita. I didn’t know how everything would work together but it was great!

Grilled chicken thighs (my dad brined them first) with roasted cauliflower and baked beans. I hadn’t had baked beans in a long, long time and I really enjoyed these.

One night I just made myself a big salad with mixed greens, tomatoes, blueberries, strawberries, goat cheese, dried cranberries, honey almonds and balsamic vinaigrette.

On the final night of our visit, my dad made one of our favorite fish dishes…sea bass Hong Kong style. It’s a replication of a dish we used to love at Atlanta Fish Market when my family lived in Georgia.

Pimento cheese is an excellent snack!

I don’t know where I’ve been but I just tried Perfect Bars for the first time when I was on the way to Tennessee. I am not a big bar person…but sometimes they’re convenient and easy. I thought these were pretty good.

Who’s surprised? Polished both of these off in a few nights in Florida. 🙂
