Friday I’m In Love

I hope this finds you enjoying your Friday. I am checking in with a quick Friday favorites round-up before I hit the road for Asheville for the first weekend of my 300-hour yoga teacher training at Asheville Yoga Center!

The very first favorite that I want to share is that Zoey is 100% okay. She’s had two rounds of bloodwork done for her kidney function and everything has come back perfect. She’s been her normal, spunky, chowhound self. I am grateful and anything that would even be the slightest risk for Zoey to get into has been moved to a higher cabinet.

(FYI: I do have cabinets with dangerous things secured for those of you that asked/scolded/lectured. The raisins were an oversight…I was thinking Finn and not Zoey when I toddler-proofed. Lesson learned the very hard way.)

Moving along.

GETTING 100% ACTIVITY CLEARANCE

(image)

I had my 12 week post-op appointment yesterday and my doctor cleared me to “go crazy.” I asked about running the Charlotte Half and he said go for it and assured me there was no chance of re-fracturing or stress fracturing my toe.

Unfortunately, this is not the end of my toe journey. I go back again in three months to check the status of the nail/nail bed. There is a tiny piece of nail trying to grow back in one corner. He said they rarely grow back like they’re supposed to and usually end up growing at weird angles and can cause a lot of pain. BOOOOO. He spoke about potential future procedures but I’m just going to think positively until that’s the case.

Just for the record, my toe is not pretty…but at least I have a toe after that crazy accident and I’m back to full activity.

MARK BITTMAN’S “HOW TO COOK EVERYTHING” 20th EDITION COOKBOOK

(image)

I was sent a copy of the 20th anniversary edition of Mark Bittman’s cookbook, How to Cook Everything, and I’m in LOVE! I have had it sitting on my kitchen table since it arrived and I’ve been reading through it whenever I get a down moment of if I’m eating a meal without Finn.

One of my favorite things about this cookbook is that it will give you a base recipe and then 10 other ways to prepare/serve “X” food based on the base recipe. I’ve already gotten so much vegetable/grain/bean inspiration from the chapters I’ve read so far and cannot wait to cook my way through this cookbook. I know it’s one I’ll reference for years to come like The Gourmet Cookbook and The Joy of Cooking.

NEW HOPE FOODS DAIRY-FREE CASHEW + ALMOND DIPS

hope foods cashew and almond dips

The team at HOPE Foods sent me their new dairy-free cashew and almond dips in six different flavors. I couldn’t resist diving right into the avocado ranch and it was delish! I can’t wait to try the other flavors…super interested in the chocolate one!

I am loving this nut dip inspiration board and can’t wait to try some of these combos and come up with my own!

MY FIRST LEOPARD PRINT PIECE FOR FALL

I am admittedly slow to jump on the leopard trend but this sweater grabbed my eye at Target a couple of weeks ago and the fit is awesome. You also cannot beat the price at $19.99.

Moab Run The Rocks Race Recap (3 Day Stage Race)

I cannot believe it’s been nearly a month since I completed Moab Run The Rocks! TransRockies truly excels when it comes to planning and [...]
