Morning Run + Powerful Words + Recent Eats

Good morning! I had my light out by 10p last night and met a girlfriend bright and early for a run this morning.

It was my first time running since we ran two weeks ago! I also haven’t picked up a weight in two weeks. I’m looking forward to getting back to regular workouts as I get settled into a routine. It was such a great way to start the day! 🙂

I am subbing a yoga class this morning at 9a and I wanted to share these words with you that I read to my class yesterday afternoon about self-forgiveness. They are from Danielle Doby in response to this post on Instagram.

Danielle Doby is one of my favorite women to follow on Instagram. She’s courageous, vulnerable and fierce and her words are powerful. I can’t recommend picking up a copy of her book enough. It’s one of those that you can pick up and read a quick passage/poem from when you need a dose of beautiful words.

And now, if you need a bit of food inspiration here are some things that I eaten lately as I’ve made my way through the moving process.

BREAKFAST

Sourdough toast from the freezer with Wild Friends Crunchy Nut + Seed Be Well Blend and honey. If you love super crunchy nut butter, this one is for you!

Egg and cheese bagel on honey wheat from Poppy’s. Love Poppy’s bagels and that they used a real egg but the American cheese was not my fave. Should have asked for cheddar!

LUNCH

Acai bowl with bananas, strawberries, pineapple, granola, coconut, cacao nibs and peanut butter from Spoons.

Spinach and arugula tossed with olive oil, balsamic, honey and sea salt and topped with fresh figs (I got these at the Matthews Farmers Market), cherry tomatoes, avocado, feta, dried cranberries and pistachios.

DINNER

Takeout sushi from Koishi. This was dinner the last night in my old house. Say bye to the white railing food photos. You guys would not believe how many comments and DMs I got over the years from people concerned about my food falling off. Haha.

Viva Chicken takeout. Their cilantro lime rice is the BEST! Chicken and rice is one of my all-time favorite comfort food meals.

Here’s the first dinner I cooked in the new house! Roasted Brussels sprouts and salmon cooked in my Ninja Foodi Oven and steamed rice cooked with coconut oil. I used some of the leftover Viva Chicken yellow sauce on top of everything.

This dinner was so good! Parmesan panko crusted chicken, roasted okra with feta and sriracha aioli and sliced farmers market tomatoes.

Leftover chicken on top of a salad with shredded gouda, cherry tomatoes, toasted pecan, avocado and ranch.

QUESTIONS

What are some of your favorite feel-good and/or thought-provoking Instagram accounts to follow?

Favorite bagel sandwich combos or bagel toppings?

What’s your current favorite nut butter? Mine is Wild Friends classic creamy peanut butter. It’s so simple but so good!

TransRockies truly excels when it comes to planning and [...]

Potato and Broccoli Cheddar Soup

Potato and Broccoli Cheddar Soup

This potato and broccoli cheddar soup is a warm hug in a bowl. It’s a mash up of potato soup meets broccoli cheddar soup, and makes for a creamy, hearty and cheesy bowl that has just enough broccoli in it to make you feel like you’re getting your veggies in for a complete meal. POTATO [...]
