Finn and I are in Florida for a few days to visit my family.

RECENT EATS

Here are a few recent eats.

Trader Joe's peanut butter protein granola

Plain full-fat greek yogurt, honey, bananas, strawberries, blueberries, peanut butter protein granola (a new find from Trader Joe’s…it’s good!) and peanut butter. Just give me all the peanut butter.

Smoothie topped with that same peanut butter protein granola. The smoothie was a mix of frozen bananas, strawberries, raspberries and blueberries blended with a date, plain greek yogurt, milk and peanut butter.

Cottage cheese scrambled eggs, pumpkin apple bread and grapes.

Avocado toast on sourdough with tomato + roasted red pepper soup from Trader Joe’s. Grapes on the side.

Loving this lunch so much right now. Half a mashed avocado, hardboiled eggs, apple slices, cheese and crackers.

Baby spinach, rotisserie chicken, artichoke hearts, dried cranberries, avocado, pistachios, feta and white balsamic dressing.

Similar salad but the dinner version of it. The only change here was that I used a chopped Mediterranean blend with a basil balsamic dressing for the greens base.

Buddha bowl with air fryer tofu, roasted brussels sprouts, portobello mushrooms and butternut squash, avocado, Hope Foods original hummus and Wild Brine kraut served over basmati rice cooked with coconut oil.

Same dinner but swap Roots Thai Coconut Curry hummus and add feta and a drizzle of Trader Joe’s almond butter turmeric dressing.

Finally, my dad made homemade lasagna to welcome us to Florida. He made all of it from scratch, including the sauce, and it was to die for. I don’t remember the last time I had a traditional meat and cheese lasagna like this. Finn gobbled it up too!

Okay, off to enjoy the day with my family and at the beach.
