Cinco de Sore-o

Wow, my legs feel so spent. I’ve taught BodyPump 77 three times this week and it is by far the hardest new release in quite some time. Not only is it an awesome strength training workout but it is also packed with tracks that really challenge you cardiovascularly. I am really feeling it right now!

While I’m on the topic of workouts, no yoga again this morning. I got up at 5:15, wandered around the house for a few minutes, read some blogs and then went back to bed until 7:30. I just could not convince myself to go. Usually when I skip workouts I end up regretting it later in the day and I just haven’t been feeling that this week. It’s a clear indicator that this break from my practice is okay. I won’t say that I understand what’s going on but I’m really trying to get better about listening to my body instead of always powering through so I’m going with it.

Breakfast was banana oats with the return of Trader Joe’s Sunflower Butter. Sweet, salty and delicious. I’ve been out for a couple months and am so glad I finally restocked. It’s soooo delicious.

Lunch was extra tasty. An open faced sandwich with an Earth Fare veggie burger, spinach and pimento cheese. Ketchup for dipping on the side along with some strawberries. The melty pimento cheese totally made this.

Brandon pretty much looks for any excuse to have Mexican food for dinner so we had a feast for Cinco de Mayo. We started the evening with chips, salsa and guacamole.

And then made chicken fajitas. Brandon grilled the chicken on the Big Green Egg with Dizzy Pig rubs and I sauteed the onions and peppers inside. We had our first Vidalia onion of the season tonight and it was SO sweet and tasty. I grew up just 45 minutes from Vidalia so I have a soft spot for them.

Happy Cinco de Mayo! Did anyone else celebrate with a festive dinner?
