 Pumpkin

First fall bowl of pumpkin banana oatmeal. Sullie is excited to have a can of pumpkin open because I mix some in with her food!

Grilled Cheese & Tomato Soup

Comfort on a plate and in a bowl. Jazzed the grilled cheese up a bit with mozz, colby-jack, tofu, spinach and avocado so it was more panini than grilled cheese, I guess. Still cheesy and good though! Many of you have asked my technique for panini making. It’s very complex and sophisticated. I melt butter in a cast iron skillet and then mash the sandwich down by placing a Le Cruset cast iron pot on top of the sandwich. Cook until golden brown, flip and repeat on other side (rebutter the skillet first, of course!).

I just did a CrossFit workout.

I put on my running clothes this morning and planned on running after my morning training client. Then I got busy. So I thought I would run on my lunch break…and cleaned the house instead. I ran out of time to get a run in before working the evening shift at the new gym and I was kind of grumpy about it because it’s such a beautiful day here. I was sitting at the front desk and one minute before they started the WOD, I jumped in and did it because I had to move my body. WOD was quick and a good burn.

– 12 chest to bar pullups
– 400 meter run
– 24 kettlebell swings

I finished in 13:15. I kipped half the pullups and used a band for the others. I used a 35-pound kettlebell for the swings. I feel all better now!

More Quinoa Bowls

 

I made a big batch of quinoa and lentils at the beginning of the week. I’ve been using it as a side dish and in bowls…one of my favorite lunches! Today I layered spinach, quinoa and lentils, tofu, avocado, goat cheese, sundried tomatoes and kalamata olives. I topped it with Greek yogurt and hummus and added some chips on the side for scooping. Then I ate a ton of chocolate covered raisins while I picked up around the house. I am still working on my giant container of them.
