A Cold Charlotte Weekend

Although we didn’t get the snow that was expected for Charlotte, the weekend was very themed around what little we did get and the cold weather.

I went to Whole Foods on Friday night to stock up. (We needed groceries anyway.) Luckily, I waited long enough that the masses had cleared out. I really felt for the employees. The looks on their faces said, “Get me out of here. People are crazy.” I came home and made an easy dinner of rotisserie chicken with roasted cauliflower and roasted sweet potatoes.

We woke up Saturday morning to find the ground barely covered with snow.

It started snowing again a little later and both girls were in heaven. They did this for hours.

While we didn’t get much snow, it was FREEZING (the southern version of freezing…). During the winter I live in my J. Crew camp socks (40% off right now with code MUSTSHOP) and Columbia Minx boots. Both are super warm and I didn’t take them off all weekend.

Yoga was PACKED. Classes are always extra crowded during cold, snowy weather and this weekend was no exception. I can’t blame everyone for wanting to be in the hot room. It felt so good.

We spent the afternoon cleaning and then I made a little “pre-Whole30” trip to Sunflour. 🙂

I stopped to admire the ice trees on the way home. They were so beautiful in the sunlight.

Later that night we had dinner at a friend’s house where we enjoyed a seriously yummy spread of food including cheeses, shrimp cocktail, eggplant, olives, pate and more. Clearly, I went out with a bang!

I posted this on Instagram and had to share here too. One of my clients gave me this coffee mug for Christmas. I broke it out for my Sunday morning coffee.

Unfortunately, we’re having an issue with the heat in our house and it’s only running at about 50% right now. We struggled to keep it above 60 inside over the weekend. All the creatures were cuddling.

Even the pug.

I let one of my friends talk me into a cold run on Sunday. (Admittedly, it wasn’t hard.) We did 5.5 miles at an 8:20 pace. I couldn’t even talk for the first mile because it was SO cold that my lungs were burning and my lips felt frozen. By mile 3 I was feeling pretty good. I’m so glad we did it!

And I just have to share this Snap I received from a friend on Sunday afternoon. She was at the Y and my name was up on the screen for my 7 year anniversary. That means I started teaching BodyPump 7 years ago at the Charlotte Y (I taught in Birmingham before that). Gosh, it seems like a lifetime ago. I’m so grateful for the awesome start to my career that the Y gave me.

Did it snow where you live over the weekend?

Coldest temperatures you have ever run in?

Potato and Broccoli Cheddar Soup

This potato and broccoli cheddar soup is a warm hug in a bowl. It’s a mash up of potato soup meets broccoli cheddar soup, and makes for a creamy, hearty and cheesy bowl that has just enough broccoli in it to make you feel like you’re getting your veggies in for a complete meal. POTATO [...]
