Workout Recap + What We’re Eating This Week

Hi and happy weekend! It’s been just crazy gorgeous in Charlotte so I’ve been soaking up as much time outside as possible. It is 77 degrees and sunny right now. The trees and flowers are so confused and some of them are starting to bloom already.

My Sunday morning was everything I needed it to be, minus an early wake up call. Zoey ate over half of a jar of cashew butter in the wee hours of the morning on Saturday (totally Tanner’s fault! 😛 ) so homegirl has been paying the price for such an indulgent treat. I woke up at 6 a.m. to the sound of her getting sick. She seems to be fine though and her energy levels and personality are just like normal.

I spent the morning juicing, reading a magazine on the couch, cooking brunch and walking with Tanner and the girls. Now I just did my weekly meal planning and I’m off to workout at Madabolic. They’re hosting a group of teachers from the studio for a special private class. I’m running to Madabolic since I have my car situation so it should be quite the workout.

Slow cooker teriyaki chicken with stir-fry veggies over cauliflower rice

Ina’s Perfect Roast Chicken over a mix of root veggies and potatoes

Shepherd’s Pie with Cauliflower Topping made with ground lamb

Leftovers

Friday

Teacher training…we’ll either get takeout from Namastay Kitchen or I’ll do a crock pot dinner
