I’m currently feet up watching Bachelor in Paradise. I’m not much of a Bachelor/Bachelorette fan but I’m finding this highly entertaining. I’m hanging out at BFF Dorie’s house with her youngest daughter as she takes her oldest to college for the first time. Cue all the emotions all around.

In the meantime, this is keeping us laughing. Not my idea of paradise! ๐Ÿ˜›

Now for some regularly scheduled programming…what I’ve been eating lately. I’ve got a mix from the last week and a half so here we go!

BREAKFAST

egg white oatmeal

I used to eat oatmeal or overnight oatmeal every day for breakfast in the early days of this blog. I woke up one morning recently craving it something serious. I whipped up a pot of my banana egg white oatmeal. It was good for one morning but not getting back on the oatmeal bandwagon.

Scrambled eggs with fresh fruit and a zucchini carrot muffin.

Nothing else to see here other than smoothies. ๐Ÿ˜‰

LUNCH

A very random but delicious mix of arugula, brussels sprouts, sweet potatoes, avocado and a leftover grain blend with tahini turmeric dressing.

Arugula, avocado, turkey, dried cranberries, avocado, pistachios and leftover grain blend. Tahini turmeric dressing on top.

Turkey wrap + fruit. (Here’s a link to my wrap tutorial.)

Salad with arugula, pickled beets, pecans, peaches, dried cranberries, tomatoes, avocado and tahini turmeric dressing.

Salad with arugula, chicken, pistachios, carrots, red cabbage and Mmm sauce. Fruit and tomato caprese on the side.

Arugula, tofu, roasted chickpeas and sweet potatoes, pistachios and avocado. Tessemae’s green goddess on top.

DINNER

Blue Apron salmon over freekeh with spinach, dates and olives. This was really good. This is the grain blend you see on top of my salads above. There were a lot of leftovers!

Slow cooker beer chicken over cauliflower rice with lots of delicious toppings. Recipe for this one coming soon!

Blue Apron seared steak with oven fried and a corn/tomato blend. We loved the sauce for the steaks!

Leftover Buddha bowls from Sunday night’s party.

Blue Apron crispy chicken tenders with a hot honey sauce over potato salad with marinated cucumbers.

I kept forgetting to cancel Blue Apron deliveries but I finally got on top of it. It’s a blessing and a curse when I get that, “you’re delivery is on its way” email. I always end up happy that it came but I’m ready to do some meal planning. I like to sprinkle in meal delivery for a change, not do it every week.

Off to wrap up this episode and then to bed. I’m teaching at 6a tomorrow!
