What I Ate In Florida

I hope you’re not too hungry because I have allllllll the delicious food coming for you in this post. This is a recap of what I ate during our week in Florida. I’m writing it while I eat a piece of blackberry oat cheesecake from Villani’s and I’m watching Anyone But You on Netflix. Pretty perfect Sunday evening!

BREAKFAST

Plain greek yogurt, my dad’s homemade granola, raspberries, cherries, bananas, honey and almond butter.

Icelandic provisions extra creamy skyr vanilla bean

Another yogurt bowl but this one with my favorite vanilla yogurt. The Icelandic Provisions Extra Creamy Skyr is perfection. It’s so creamy, not too sweet and the vanilla bean flavor is great.

Donut morning is the best! We went to get Parlor Doughnuts for everyone one morning. I had my donut with scrambled eggs, turkey sausage and fruit. I started with a half of the raspberry pistachio…

And also had pieces of the maple pecan and strawberry shortcake. We got the coconut cream for my grandmother – it’s her fave!

LUNCH

Turkey sandwich on my dad’s sourdough. He has taken his sourdough to the next level – the taste and texture is incredible. I got a lesson on his new method during my visit. Once I get a good handle on it, I’ll share!

Turkey roll ups with avocado and cheese, ruffles and watermelon. This was my first watermelon of 2024 and YUM!

Same salad as above but with extra feta and deli turkey instead of chicken.

DINNER

This is where things get really good! Here’s what my dad cooked during our visit.

White beans and ham with cornbread. My dad soaked dried white beans overnight and then cooked them in the slow cooker for eight hours with a ham bone.

pasta alla norma

Pasta alla Norma (Sicilian eggplant pasta). This dish is very reminiscent of eggplant parmesan in flavor. My dad was able to find jarred Sicilian tomatoes which added a big flavor boost. This dish is typically served over a bigger tube pasta like rigatoni but my very sweet father pivoted to spaghetti noodles to accommodate Finn’s preferences. 🙂

Shrimp and grits. I stopped and bought fresh gulf shrimp on my way home from an outing with Finn. Doesn’t get better than that!

Homemade calzones + salad. This homemade calzone dough was made from 100% sourdough and really flavorful and fluffy!

Here it is in all of it’s cheesy goodness. This was a decadent but delicious dinner!

Final dinner was leftovers. The other half of my gigantic calzone with salad topped with shrimp.

A FOOD/COOKING UPDATE FROM MY DAD

My dad has recently made a change in his diet and cooking to focus on minimizing ultra-processed foods and maximizing veggie-forward meals. It was fun to chat with him about it during our visit, and I learned a lot. (Giving up Cheez-Its…probably needs to happen. Giving up ice cream…unlikely.) I was chatting with my mom tonight and she shared that they had sweet potatoes, corn on the cob and roasted beets for dinner!

    Can you share the shrimp and grits recipe? All of the food you had in FL looks amazing—but the shrimp and grits looks fabulous! Please please share the recipe! Thank you!

    You can make cheez its with sour dough discard super yummy and only like 5 ingredients
