Recent Eats To Kick Off The Week

Hello and welcome to a fresh new week! If you have the President’s Day holiday off of work – ENJOY! Finn is out of school today but I am teaching a couple of yoga classes and filming content for my app. It’s always fun to teach on holidays as classes tend to be packed out. 🙂

Before I get to it – here’s a round up of what meals have looked like over the last couple of weeks. Still a lot of Trader Joe’s finds showing up in my meals but most of them are replaceable for things you can find at any store.

BREAKFAST

Two slices of toasted, buttered homemade sourdough, cottage cheese scrambled eggs topped with sauerkraut and a mango.

Banana and blueberry egg white oatmeal with cottage cheese, chia seeds, peanut butter and blueberry jam.

Toasted Whole Foods brand multigrain bread topped with salted butter, cream cheese, cottage cheese scrambled eggs and sauerkraut.

Half a Dave’s Killer Bread cinnamon raisin bagel with salted butter and cream cheese, cottage cheese scrambled eggs and watermelon. It is totally NOT watermelon season but this little personal watermelon that I got for Finn’s class Valentine’s Day snack was not bad at all!

Never not eating smoothies and smoothie bowls. This one has mangos, strawberries, blueberries, bananas, peaches, plain greek yogurt, medjool dates, almond butter, almond milk, Bulletproof collagen protein and Bulletproof prebiotic powder. This is what I have for breakfast 75% of mornings but I just don’t take photos because it’s so repetitive for me. It’s what I crave more than anything else.

LUNCH

Trader Joe's sesame crunch salad

Trader Joe’s Sesame Crunch Salad kit + leftover sriracha maple lime salmon, avocados and tomatoes.

Chopped romaine, grape tomatoes, carrots, celery, avocado, feta, dried cranberries, pepitas, deli turkey and marinated cumin parsley chickpeas from Trader Joe’s with Trader Joe’s Goddess dressing.

Turkey + ham sandwich on honey wheat with Duke’s mayo, mayomust sauce, avocado, colby jack cheese and sweet pickles.

Broccoli cheddar cottage cheese quiche with avocado and mango.

Mixed greens tossed with balsamic, olive oil and sea salt and topped with avocado, deli ham, apples, pistachios, beets, dried cranberries, feta and parmesan couscous. A drizzle of poppy seed dressing on top.

Similar salad as the above but sub Trader Joe’s shawarma marinated chicken thighs for the ham.

Sourdough toast with salted butter, mashed avocado, cottage cheese scrambled eggs and sauerkraut.

Mixed greens tossed with balsamic, olive oil and sea salt and topped with carrots, blueberries, celery, pepitas, feta, quinoa, deli turkey, croutons and dried cranberries.

The best sandwich is the day that I bake sourdough. Yum and yum. Freshly cut, super soft sourdough with mayo, avocado, ham, cheese, avocado and the mayomust sauce I linked to above.

DINNER

Sriracha maple lime salmon (need to post this recipe – it’s a staple) with steamed basmati rice and a sautéed mixed veggie blend from Trader Joe’s that I would 100% buy again.

Trader Joe's shawarma chicken thighs

Trader Joe’s Shwarma-marinated chicken thighs with roasted brussel sprouts, steamed basmati rice, feta, hummus and Trader Joe’s marinated cumin parsley chickpeas. This was a really great combo and I would totally buy this chicken again. I just roasted it at 400 until the internal temp was 165 (about 20-25 mins).

Trader Joe's vegetable fried rice

Trader Joe’s frozen vegetable fried rice to which I added ground chicken and a scrambled egg. It was ready in under 15 minutes and very delicious. Finished it off with coconut aminos and sriracha. This fed me for two dinners.

Taco bowl with taco-seasoned ground beef, rice, black beans, corns, tomatoes, shredded cheese, plain greek yogurt, Trader Joe’s pepita salsa, mixed greens and a drizzle of ranch. I’ve eaten some variation of this meal three times in the last week.

Chopped romaine, avocado, tomatoes, carrots, celery, shredded cheese and Trader Joe’s gluten-free chicken nuggets cooked in the air fryer and tossed in buffalo sauce. Ranch on top.

ETC

cookies and cream ice cream and peanut butterStill going strong on my ice cream love but the most exciting recent development was discovering how delicious natural creamy salted peanut butter is on cookies and cream ice cream. You should definitely try this.

Over the weekend I baked my best loaves of sourdough in I can’t tell you how long! I credit it to using fresh starter I got from my dad over Christmas and I tried King Arthur bread flour in place of the all-purpose I usually use for the first time. Still loving bread baking in my Staub oval dutch oven. It’s on a great President’s Day sale at Williams-Sonoma right now!

    I always have gluten free bread with 2 eggs ! And then coffee (-; I eat fruits and sometimes nuts or yogurt as a mid-morning snack later because I have breakfast first thing (-;
    I like salmon or tuna in my salads. Pepitas and feta are great too! Manchego cheese !
    I’m really into bibimbaps right now (corean bowls ). You should try one!

    1) Oatmeal, always! I never seem to get tired of it, even if it’s 100 degrees outside. I love adding egg whites as well for more protein.
    2) Deli chicken/turkey or rotisserie chicken. Love how quick and easy they are.

      I wish I could get more into oatmeal but it just doesn’t appeal to me oftentimes! I love that you love it so much! I had a rotisserie chicken this week and it was such a great simple and delicious protein! Thanks for sharing that soup recipe – YUM!

    Breakfast is 2 eggs over medium with toast or avocado toast with veggie cream cheese, everything seasoning and sprouts.

    I’ve been uninspired with dinner lately so I’m all over the place.
