Peanut Butter Fun Friday

Tomorrow is Friday and I have the weekend off of yoga teacher training. Brandon and I have no plans so I am looking forward to my first relaxing weekend at home in a month! Happiness…

I’m celebrating with a fun baking project and you might want to read to the end of the post to find out more! 😉

It took every ounce of motivation that I had to get up at 5:15 a.m. and go to ashtanga this morning. It was totally worth it. I had a beautiful practice that left me with the warm fuzzy “I love yoga and am so grateful for my practice” feeling. I know, I know…such a yoga nerd.

Breakfast was apple cinnamon oatmeal at my desk and I came home for lunch.

Trader Joe’s veggie burger with mashed avocado, spinach, sprouts and cheddar on Great Harvest Honey Whole Wheat. Carrots, grapes and strawberries on the side.

I was pretty hungry all day today. I’m not really sure why but since I was teaching BodyPump tonight, I made sure to get a good snack in.

I had Liberte goat milk yogurt for the first time and it was really good. So creamy and not too sweet.

I topped it with a little bit of granola and almonds. I will definitely be purchasing this yogurt again.

I taught BodyPump after work and we had a full house – 40 hard working, fun members! There was tons of energy in the room. I love teaching group exercise!

Brandon requested Chicken Chili for dinner tonight. He said he really wanted to get in one last chili night before Spring is here in full force. I have a very strict rule about not making “winter” foods when the weather is warm! 😀

Salad and cornbread on the side.

It was a delicious dinner but I am really looking forward to warm weather foods, grilling and eating outside. I’m ready to wrap up Winter 2011.

So…let’s get to the fun part! I posted earlier that I participated Katie’s online bake sale today to help her raise funds for a service trip to Nicaragua. The bake sale is over and was a huge success! I am going to be baking Peanut Butter Chocolate Chip Bars this weekend for the winner and while I’m in the kitchen I’m going to bake an extra batch for a Peanut Butter Runner reader!

It’s no secret that Brandon and I love dessert so if you’d like to enter for a chance to win a batch of my Peanut Butter Chocolate Chip Bars, leave a comment telling me about a dessert that you love to make. I’ll pick a winner at random. I will mail the bars out to the winner on Monday. You have until noon (EST) on Sunday to enter. I will ship anywhere in the U.S.

And just for fun, Brandon is going to pick one dessert that he wants me to make at home and I will feature that recipe on the blog so please share recipes! (This is not required, just encouraged.)

I love to make homemade granolas. Since I lack all forms of portion control, I usually eat enough to count it as dessert. 🙂

  • Bess @ Bess Be Fit March 3, 2011, 10:22 pm

I want to learn how to make crazy cakes with multiple layers and lots of chocolate! No boxed cakes…real cakes!! Its fun to make, decorate, and eat 🙂

  • Heather March 3, 2011, 10:31 pm

My cupcakes are pretty famous among my family and friends.

And while I love eating them, I love making them even more!

    • Jen March 4, 2011, 11:57 am

Heather – what makes them famous!? What flavors do you do. I am a sucker for cupcakes! 🙂

  • Lauren G March 3, 2011, 10:34 pm

My favorite dessert is cored, roasted red apples topped with peanut butter, walnuts & unsweetened coconut!

    • Jen March 4, 2011, 11:57 am

sounds like a delicious and healthy dessert option. i love baked apples too! my grandmother used to make them with red hots when we were younger! so fun.

  • Courtney March 3, 2011, 10:58 pm

One thing I love to make are Peanut Butter Blossom Cookies. They are classic and so yummy. Its a kid friendly recipe so my 4 year old is able to help me make them… and eat them.

  • D March 3, 2011, 11:02 pm

Creamy lemon bar! I just made them tonight and I can never just eat one.

Your Peanut Butter Chocolate Chip Bars sound amazing…classic combo!

  • Emily March 3, 2011, 11:08 pm

  • Kelly March 3, 2011, 11:23 pm

Love, love, love to make homemade banana pudding with ‘nilla wafers. Reminds me of being younger when my mom would make it whenever I had a serious craving for it!

    • Jen March 4, 2011, 11:55 am

Kelly – your comment made me smile because the dessert that I always request my mom to make for me is banana pudding. She makes it with homemade pudding and merangue and it’s so good. It’s an old recipe from Southern Living.

      • Jen March 4, 2011, 11:55 am

oh and now I have a serious banana pudding craving! 😛

  • Erinn March 3, 2011, 11:30 pm

Even though it’s a Christmas time dish in our house, I love making charlotte russe with my mom. I love any type of pudding/custard dessert. It’s the best!

  • Nicole March 3, 2011, 11:44 pm

Those PB bars look amazing! I love trying any new cookie recipe, my current favorite is dark chocolate-coconut oatmeal raisin cookies!

  • Caroline March 4, 2011, 5:56 am

One of my favorites is S’Mores bars – always a hit. Also chocolate chip cookie sandwiches with fun colors of icing in the middle, a college crowd pleaser and great gift for showers/parties/birthdays. Have a good weekend!

    • Jen March 4, 2011, 11:53 am

Caroline – the chocolate chip cookie sandwiches do sound delicious and like such a cute idea for parties! Thanks for sharing the idea!

  • Jaimi Dean Franus March 4, 2011, 6:01 am

Our family LOVES my gingersnap cookies….like you, I try to NOT make them in the warmer months and they’re extra appreciated when fall/winter rolls around.

  • Caitlin March 4, 2011, 6:35 am

My favorite thing to bake are called “killer” brownies- they are chocolate, caramel, and all that really good stuff! YUm!

    • Jen March 4, 2011, 11:51 am

  • Becky March 4, 2011, 7:03 am

Your baked goods always look so amazing! When I bake, I usually make cupcakes or cookies. I recently tested out a friends family recipe for carrot cake cupcakes and it was amazing! I saved that recipe and plan to use it to wow my friends, family, and co-workers at any upcoming gatherings.

  • Andi March 4, 2011, 7:16 am

After dinner I like to make single size portions of quick desserts! (aka, I cannot be trusted).

Usually this involves the vita mix, and I make one (..or two) “raw ball” cookies.

  • Jessica March 4, 2011, 7:55 am

My easy peanut butter cookies are a big hit with my family. Only three ingredients and they are SO delicious! All you need is 1 cup of peanut butter, 1 egg and 1 cup of sugar ( I use raw sugar and it gives the cookies a little extra crunch!)

    • Jen March 4, 2011, 11:51 am

yum…sounds so easy and so delicious!

  • Sherry March 4, 2011, 8:19 am

My favorite dessert are homemade brownies and to make it even more special, I like icecream on top of a warm brownie!!

Off subject but I thought I would ask since you are experienced in the yoga department. I’m a busy mom of 4 and I workout at home with dvds and other various workouts that can be done in doors. I consider myself healthy and physically fit. I have purchased a few yoga dvds because I want to incorporate it into my workout routine but have been disappointed with all the dvds I purchased. They are too short and not very challenging but are great for a good stretch, that’s about it. Do you have any yoga dvds that you would recommend? You inspired me to get into yoga, thank you!!!

    • Jen March 4, 2011, 11:50 am

Sherry – brownie sundaes are my husband’s #1 all-time favorite dessert.

Regarding yoga DVDs…I actually get this question a lot but I don’t have a good answer. I don’t own any yoga DVDs and don’t want to recommend something I haven’t tried. I really need to test some out so I can recommend some for you guys!!!

Check out http://www.yogadownload.com. They have tons of videos you can download. I recommend checking out anything that’s power, vinyasa, Baptiste Power Vinyasa or ashtanga.

      • Sherry March 4, 2011, 3:06 pm

I understand. I’m going to the website right now. Thanks for the tip!!!

  • Kelsie March 4, 2011, 8:43 am

I love to make (and eat) cookies…all types of cookies. Yum!

  • Erin March 4, 2011, 8:48 am

In the summer I love to make Blueberry Blackberry Shortcakes. I use this cooking light recipe, but make homemade whipped cream. So refreshing and perfect after a summer meal. I also make an amazing carrot cake.

    • Jen March 4, 2011, 11:46 am

Erin – those look sooo good. I make a really good biscuit-based cobbler from Cooking Light with fruit during the summer.

Homemade whipped cream makes all the difference! 🙂

      I loooovvveee carrot cake!

  • Jackie @ Baking Charms March 4, 2011, 8:57 am

They sound awesome to me! I love Joy the Baker. One of my favorite food blogs!

  • Alaina March 4, 2011, 9:14 am

I love making my orange pumpkin cookies. They are so moist and delicious. And I love putting the frosting on top! 🙂

  • Madison March 4, 2011, 9:19 am

What dessert don’t I love making?? But since I have to choose… carrot cake cupcakes with cream cheese / pineapple frosting might be the winner@

    • Jen March 4, 2011, 11:44 am

Carrot cake might be my all-time favorite cake flavor…that or strawberry. Cream cheese/pineapple frosting sounds so awesome!

  • Sabah March 4, 2011, 9:26 am

I am a sucker for Tiramisu–BUT this past Thanksgiving I found a recipe for a no bake pumpkin pie (Joy the Bakers blog) and fell in LOVE! It wasn’t too heavy or overwhelming, instead it was super refreshing. I made it three times after Thanksgiving because I was so in love. Not only is it the best tasting dessert ever, it is super easy to make. 🙂 Unfortunately, I am studying abroad so if I were to win I wouldn’t get to try your amazing dessert but I would have them sent to my bf because I know he would love them!

  • Margaret March 4, 2011, 9:27 am

I am famous for making oreo truffles, and I often add a poke of mint extract, they are so good. The peanut butter chocolate bars sound amazing too. enjoy your relaxing weekend

  • becca March 4, 2011, 9:37 am

    they never disappoint!

    • Jen March 4, 2011, 11:41 am

I personally think there is no substitution for butter in baked goods and brown butter chocolate chip cookies sound soooo amazing. Thanks for sharing!

  • Erin March 4, 2011, 10:03 am

We don’t make a lot of desserts in our house, but I’ve always liked this Cooking Light recipe for oatmeal raisin cookies. It feels less sinful, although I guess that kind of defeats the purpose of dessert!

  • Simi March 4, 2011, 10:07 am

I would love to make a raw vega dessert one day, I just never have all of the ingredients. booo

    • Jen March 4, 2011, 11:37 am

Simi – I’ve never made any raw/vegan desserts either but I always see them on other blogs. I agree that I never seem to have the right ingredients on hand.

  • Erin March 4, 2011, 10:12 am

I’ve been reading your blog for awhile and since I also practice yoga it’s fun to see your yoga adventures. 🙂 Unable to resist dessert AND a giveaway…I love making chocolate chip cookies!

    • Jen March 4, 2011, 11:36 am

My favorite dessert I’ve ever made is a recipe from Giada DiLaurentiis… it’s a raspberry marscapone tiramisu. Slightly labor intensive but oh so worth it, with grand marnier whipped into the marscapone… bliss!

  • Marian March 4, 2011, 11:15 am

So glad to hear you had such a great practice on Thursday!

One thing I’ve been wanting to make recently is homemade Samoas….we’ve got a few boxes in our freezer but I’ve been staying away since they’re full of such gross ingredients! I’ve also been trying to brainstorm ways of using the huge jar or Dulce de Leche I brought hoome from Argentina this summer 🙂

    Enjoy your relaxing weekend!

  • Candice March 4, 2011, 11:16 am

I have a recipe from Vegetarian Times for a dense, rich, vegan chocolate espresso cake with a chocolate ganache frosting. It’s made in an 8″ round pan and cooks up to about 2″ high in the center, so it’s a nice size to snack on all week! I often add ground almonds to it, and it gives it a nice texture and flavor.

I read your blog every day, I love checking in on it!

    • Jen March 4, 2011, 11:30 am

Thank you so much for reading Candice! I really love hearing from you guys! 🙂

And the cake sounds amazing and right up my husbands alley. He is a chocolate lover!

  • Brittney March 4, 2011, 11:21 am

Ah, I want those PB chocolate chip bars!! I’ll go with my blueberry pie with almond crust.
It’s kind of infamous now, and very tasty!

    • Jen March 4, 2011, 11:29 am

Brittney – I’ve heard (and read) so much about your blueberry pie but I’ve never been at any of the get togethers when you’ve brought it. We’ll have to remedy that this summer when blueberry season rolls around again! 🙂

  • Kelli March 4, 2011, 11:32 am

    Those bars look fab!

My favorite super-easy dessert is homemade oreos. Only three ingredients!

  • JennyV March 4, 2011, 7:33 pm

My favorite dessert — Trillist Bars. I’m certain there is a ‘real’ name for them out there, but that’s the name my husband has given them in our house and it is going to stick.
    2 C oatmeal
    1 C brown sugar
    ½ C coconut
    ½ tsp salt
    1 tsp soda
    1 ½ C flour
    1 C melted butter
Mix all together and Save ½ C of mixture
    Press into pan

    1 can sweetened condensed milk
    ½ c pb
    Spread over bars
    Sprinkle on top
    3/4 C Reece’s pieces
    3/4C chocolate chips
    sprinkle over bars
    Bake @ 350 for 20-30 min

SO unhealthy – SO delicious 🙂
