I’m here with a lunch break post today to announce a special event happening on Katie’s blog today. This involves the possibility that I will bake delicious Peanut Butter Chocolate Chip Bars for you so listen up!
Katie is in graduate school for dietetics and has committed to spending her spring break in Nicaragua to participate in service learning projects in two rural towns. Here are more details from Katie on the projects:
- Participate in an archaeological dig for ancient artifacts which will then be used to create a small local museum that will drive traffic to the area and build up their economy
- Provide nutritional counseling and medical supplies to the local people. This will involve: planting a community garden, presenting cooking demos using local produce and participating in dietary recalls and evaluations at a free clinic that we’ll be running with doctors from a nearby city. (Our medical supplies have been donated by a doctor in the US.)
- Acquire an understanding of and compassion for a highly impoverished, malnourished population and contribute to a group effort to improve their way of life without imposing our own American practices, foods or ideals
Katie will be living in a hammock for a week without electricity, plumbing or any real connection to the world outside these small communities. She will participate in hard labor in extreme temperatures and then bathe in a river at the end of the day.
Why am I sharing all of this? Because Katie needs help with fundraising to cover the program costs. She is hosting an online bake sale TODAY to raise funds for the trip. I am donating my super delicious Peanut Butter Chocolate Chip Bars to the bake sale. Katie will let me know who the highest bidder is and I’ll be sending them freshly baked bars (and other goodies :)) next week!
