Trying to Focus Friday + Recent Eats

Happy Friday friends! I’m getting a late start on blogging because I just could NOT focus this morning. I sat down at my computer but my brain was all over the place. I decided to take the girls for a walk since it was a gorgeous morning. Exercise always helps me with energy and focus.

As you can imagine, I’m a bit distracted by wondering when baby is going to come! I have plenty of work projects to keep me busy but having a hard time getting motivated to tackle them.

I have lots of good eats to share with you from this week. Someone on Instagram sent a message saying this baby doesn’t want to come out because I’m feeding him so well in there. 😉

BREAKFAST

5% plain Fage greek yogurt, half a banana, Purely Elizabeth chocolate sea salt peanut butter granola, dried cranberries and peanut butter.

Half a cinnamon raisin bagel with butter, two scrambled eggs and pineapple.

Smoothie bowl topped with the Purely Elizabeth chocolate peanut butter granola. The smoothie had two dates, SFH fish oil, frozen spinach, frozen cauliflower, frozen cherries, half a frozen banana, frozen raspberries, peanut butter and almond milk.

LUNCH

Still going strong on my friend dates! I’ve had two lunch dates and two walking dates this week. I met a friend at Cafe Monte on Monday and had this kale salad with goat cheese, dried cherries, apples, bacon, almonds and a scoop of chicken salad.

Massaged baby kale, leftover pesto salmon, roasted zucchini, tomatoes, feta, avocado, dried cranberries and pepitas. Honey balsamic dressing on top.

Build your own salad from Reid’s with spinach, arugula, beets, bacon, goat cheese, hardboiled egg, chickpeas, spiced pecans and dried cranberries.

DINNNER

I’ve been on my game with dinner this week! Trying to enjoying having time to cook and create before those days are numbered for a while. (From what I’ve heard…) 😉

pesto baked salmon with zucchini, tomatoes and lemon-herb rice

I baked salmon, zucchini and tomatoes together on a baking sheet and served lemon herb basmati rice on the side. This dinner was so easy but really delicious. I just seasoned the salmon with salt and a lemon pepper grinder and then topped it with pesto. I seasoned the zucchini with salt and lemon pepper too and drizzled the zucchini and tomatoes with olive oil. I think I baked this for about 20 minutes on 350.

For the rice, I just steamed basmati (my fave) rice with half chicken broth and half water and then when it was done cooking I stirred in lemon zest, lemon juice and some dried basil and parsley.

Spinach and artichoke stuffed portobellos topped with panko and marinara sauce. I also made a bag of Trader Joe’s gorgonzola gnocchi and sautéed it with Trader Joe’s sun-dried tomato chicken sausage. This dinner was super yum. I need to post my mushroom recipe for you guys!

My mom said this sounded not so good but I love rice bowls! Leftover lemon-herb basmati rice with half an avocado, a sprinkle of shredded cheese, two scoops of hummus, a drizzle of olive oil and some paprika.

And finally, stuffed peppers! I made this up as I went but it turned out so well! I stuffed the peppers with a Mexican-ish quinoa mix of sauteed onion, zucchini, sun-dried tomato chicken sausage, black beans, fire roasted tomatoes, garlic and some seasonings. Topped with cheese and baked.

And then served with plain greek yogurt, guacamole and salsa.

ETC

Still loving kombucha at night for a sparkly alternative to water. This Brew Dr. kombucha is a new fave. It’s so light and crisp. The clear mind flavor is awesome!

And of course I’m still loving all things cake…especially carrot!

Off to figure out what’s for lunch today. I’m thinking sandwich on sourdough. Enjoy the rest of your Friday and your weekend!
