What I’ve Been Eating Lately

Good morning! I’ve been up since 4:15 a.m. with a very cute baby boy. He was having gas pains and then wanted to eat and now thinks it’s playtime. I decided to seize the day and knock out a blog post rather than trying to get him back down to sleep. Soon enough, he’ll be ready for a nap and maybe I’ll go back to sleep again with him. I also might get up and eat breakfast because it’s now 6 a.m. and breastfeeding hunger (and thirst) is a real thing.

But seriously, I’ve never felt such urgent thirst in my life. I don’t go anywhere without a water bottle and I crave cold water like I never have before. I usually prefer room temperature water but I don’t know if it’s the hot summer weather or breastfeeding but I need it ice cold these days.

Along the lines of hunger and thirst…recent eats for you today!

BREAKFAST

Scrambled eggs and fresh fruit

Two scrambled eggs cooked in butter and fresh fruit.

Smoothie bowl. Not an easy task in my grandmother’s blender and missing my Vitamix! Also, the blender scares the crap out of Finn! I turned it on the other day and he made the saddest face and started crying. I felt so bad!

Plain full-fat greek yogurt, granola and fruit with peanut butter.

LUNCH

Turkey sandwich with mayo, avocado, provolone and tomatoes.

4% cottage cheese, half a mashed avocado, diced tomato and Wheat Thins. I dipped the crackers in the cottage cheese mix. I swear it’s good but I know it looks random.

Peanut butter, honey and banana sandwich.

This was a kale salad kit that came with pepitas, cranberries and poppyseed dressing. I added blueberries, turkey and half and avocado.

DINNER

I’ve been eating breakfast and lunch at my grandmother’s place but going down to visit my parents for dinner. Not complaining about showing up at 6 p.m. to eat and not having to cook! (Or clean!)

Also, the only way I’ve been able to eat dinner the last week is by babywearing. Finn has decided that dinner time is when he likes to start his witching hour but if I put him in the Ergo he will usually fall asleep before dinner and I can eat in peace…but with a baby strapped in front of me. That was fun on burger night. 🙂

My dad grilled burgers one night and had already put cheese on them. I decided to make them double cheese and add a little pimento cheese as well. My dad fully endorsed this idea. Roasted potatoes and corn on the side.

Pork chops with broccoli. We pan-fried the leftover polenta and it was even better than the first night!

Sauteed fish with rice and roasted acorn squash. There was a really yummy brown sugar and butter glaze on the squash.

Homemade Banana Pudding

My mom made my favorite dessert of all-time…homemade banana pudding! She’s been making this for years and years and makes her pudding and meringue topping from scratch. It’s so delicious!
