What I Ate + How I Worked Out

Many have shared that they liked seeing a full day of eats from start to finish but I know some of you also like the “recent eats” round ups so I’ll try to do a mix of both.

My Tuesday got off to an early start when Finn woke up to eat at 4:45 a.m. and then I found myself changing  a blowout diaper at 5 a.m. while also dealing with spit up eruptions and being peed on at the same time. I honestly didn’t even bat an eye and it was one of those moments where you are covered in bodily fluids, don’t care and realize your life has truly forever changed…haha. Luckily, I was able to get him back to sleep (stripped down to a diaper) for a couple more hours after that craziness and I snoozed too.

homemade yogurt with honey, granola, blueberries, raspberries, strawberries and almond butter

Once I got up I made a cup of coffee and a bowl of plain homemade yogurt with honey, granola, blueberries, raspberries, strawberries and almond butter. My grandmother always asks how our night went and she was highly entertained by my tales.

buttermilk biscuit

Once Finn went down for his first nap, my dad and I got to work on shooting the biscuit tutorial. It went great and of course I had to taste-test our finished product so I had a biscuit around 10:45 a.m.

Fast-forward a couple of hours later and Finn was down for his second nap. My mom sat with him while he slept so that I could go for a quick workout. I ran 3.5 miles at an 8:54 pace and then did a quick strength workout of three rounds of 10 bicep curls, 10 shoulder press, 10 tricep extensions and 10 single arm rows.

I feel like I have to tell you that my legs were STILL a little sore today (Tuesday) from the 50 air squats and step ups that I did on Saturday. It is so crazy to me that I’ve gone from teaching strength 5x/week and never being sore to 50 air squats making me sore for days but this is postpartum fitness and I’m fully embracing it! I have no expectations around what it “should” be.

Lunch Snack Plate

As soon as I got back I cracked open a La Croix and hopped in the shower. There is nothing better than a super cold and fizzy sparkling water after a hot run. Lunch was a random mix of chicken salad, avocado, crostini crackers, bread and butter pickles and watermelon.

Post-lunch treat + I also drank a Brew Dr. Clear Mind Kombucha. This is one of my all-time favorite kombucha flavors. It is so light, crisp and refreshing.

salad

I had dinner with my parents at 6 p.m. My mom made us salads with greens, artichokes, tomatoes, radishes and homemade Italian dressing.

homemade pizza

And my dad made homemade pizza (dough and everything). Pizza night will always be one of my favorite nights! I had these two pieces + one more sausage.

We always eat dinner at the table but my parents and grandmother have a tradition that on pizza night they eat on the couch and watch a cooking show. Finn started in the Boppy but quickly decided he wanted to be held and participate in the fun with us. We watched another episode of Next Food Network Star, which has become one of my favorite shows.

The night ended with ice cream. These two Haagen-Dazs flavors are AMAZING and I highly recommend!

What’s your favorite cooking/food-related TV show?

What did YOU eat yesterday? (Tuesday)

Moab Run The Rocks Race Recap (3 Day Stage Race)

I cannot believe it’s been nearly a month since I completed Moab Run The Rocks! It’s a three-day stage race in Moab, Utah that’s put on by the same race organization, TransRockies Rockies Race Series, that I did my six-day Colorado race with back in August. TransRockies truly excels when it comes to planning and [...]

Potato and Broccoli Cheddar Soup

This potato and broccoli cheddar soup is a warm hug in a bowl. It’s a mash up of potato soup meets broccoli cheddar soup, and makes for a creamy, hearty and cheesy bowl that has just enough broccoli in it to make you feel like you’re getting your veggies in for a complete meal. POTATO [...]
