Happiest of Sundays to you guys. It’s a sunny and gorgeous day in Charlotte. Our afternoon includes some fun activities like a picnic with a friend and a play date with another babe. Although I have to say that I am not looking forward to darkness at 5:30 p.m. This is going to majorly impact our evening walking routine.
I have a ton of recent eats to share with you today. I’m almost six months into motherhood and life with a baby and my meals are still all over the place. It’s all about convenience (today’s post could be titled “how many ways can I use a rotisserie chicken?”) and simplicity. I’m still leaning towards more carb-heavy meals as opposed to protein + veggies. I’m also indulging my sweet tooth (which I have alwyas had…thanks mom 😉 ) A LOT!
I’ve received so many questions lately on Instagram about intuitive eating and if I count calories and macros. Most of you know that I do not count anything. I know it’s helpful for some, but it just doesn’t work for me. I am 100% practicing intuitive eating. I wrote a post last about my journey through eating and to food freedom. Be sure to check that out but also let me know if you have specific questions around intuitive eating that you’d like for me to go into more detail on.
Okay…to the eats!
BREAKFAST
Lots of greek yogurt bowls. If you haven’t made the switch to full-fat greek yogurt, DO IT NOW! The Fage 5% is dreamy creamy. I can seriously eat it straight up plain. It’s so so good. This bowl has Trader Joe’s pumpkin butter swirled in and is topped with Purely Elizabeth Pumpkin Cinnamon Granola, bananas and defrosted cherries from the freezer. A big scoop of peanut butter on top.
I have been packing overnight oats and chia pudding for my teacher training weekends and have been reminded how much I enjoy them after a long (and needed) hiatus. Here is my base chia pudding recipe. I topped it with a packet of RX BAR nut butter…that stuff is amazing!
LUNCH
Lots of PB&Js for teacher training weekends and travel. Pro tip: peanut butter both sides of your bread so that your sandwich isn’t soggy and you get more PB goodness!
Y’all…I cannot get enough of this turkey + bread and butter pickles sandwich combo. This is Dave’s Killer Bread with mayo, hot and sweet mustard, turkey, avocado, provolone and bread and butter pickles.
SEE!? This is the same as above but minus the avocado because mine weren’t ripe yet. Sometimes I almost want to skip my sandwich or salad if I don’t have avocado for it. It seems like such a crucial ingredient!
I did do a salad one day! This is massaged baby kale (EVOO, sea salt and lemon juice) with pumpkin spiced pecans (from Whole Foods), roasted acorn squash, avocado, shredded rotisserie chicken and dried cherries. Trader Joe’s Almond Butter Turmeric Dressing on top.
DINNER
Love these veggie burger + egg bowls. Couscous over a bed of spinach and topped with a fried egg, a Dr. Praeger’s veggie burger, kimchi and hummus.
Rotisserie chicken with Bone Suckin’ Sauce, roasted acorn squash and roasted cauliflower.
Quesadilla with spinach, chicken, cheese, salsa and plain greek yogurt (great sub for sour cream).
Teacher training weekend hotel dinner. Salad with apple chips, a fried goat cheese disc (YUM…can I get this on all of my salads please!?), spiced pecans and grilled chicken.
A also ate a few bowls this week that looked like this. Leftover couscous (I cooked a ton) with roasted acorn squash, chicken, hummus, avocado and Trader Joe’s Almond Butter Turmeric Dressing.
ETC
A pumpkin apple muffin + hot tea from Sunflour.
Ginger molasses cookie + golden milk from a little coffee shop in Asheville that I stopped at while traveling. This was my first time trying golden milk, it’s a blend of tumeric and spices, and I wasn’t a huge fan.
Cream cheese danish and tarte tartin from Renaissance Patisserie. These were incredible and this will be my new go-to coffee/pastry spot in Charlotte.
