BREAKFAST

Apple Cinnamon Overnight Oats

I had an empty peanut butter jar so I decided to bring back an old favorite…overnight oats. This was an apple cinnamon combination with half a diced apple, cinnamon, honey, greek yogurt and almond milk.

LUNCH

Turkey Sandwich on Homemade Sourdough

I baked sourdough this week so I had to make a sandwich using the fresh bread. It’s always good but especially soft and heavenly on the day it’s baked.

La Belle Helene Quiche

Finn and I met some friends at a new French restaurant uptown, La Belle Helene, for lunch one day. I had quiche and salad. I am such a big fan of quiche!

Turkey Sandwich with Tomato Soup

Another turkey sandwich on sourdough and a cup of tomato and roasted red pepper soup on the side. The soup was from Trader Joe’s.

DINNER

Veggie Lasagna

One of my girlfriends made me a veggie lasagna a couple of months ago so I pulled it out of the freezer and baked it on Sunday night.

It was so crazy delicious and I ate it three nights in a row.

It was packed with cheese and lots of veggies like mushrooms, spinach and zucchini. It was probably the best veggie lasagna I’ve ever had!

Sriracha Lime Salmon

Dorie came over for dinner one night and I served this sriracha lime salmon over Trader Joe’s cauliflower fried rice. I added sautéed mushrooms to the rice.

Cheese grits, roasted brussles sprouts and fried egg

This was a weird dinner but it totally worked. I was craving grits and had just roasted balsamic brussels sprouts to post the recipe on my blog. I decided to combine them by making a pot of cheese grits and topping it with brussels sprouts and a fried egg.

Texas Sheet Cake

A friend gave me this chocolate cake as a baby freezer meal and I pulled it out of the freezer this week and ate the whole 8×8 cake myself over the course of the week. Ahhhh. The cake reminded me more of an undercooked brownie with frosting and that was a GOOD thing. Mmmm. I’m pretty sure it was a Texas Sheet Cake.

My crew is enjoying the cooler walking temperatures.

And Zoey stays SO close to Finn at all times. I think this is partially because she loves him and he notices her now and partially because she tries to lick his spit up. Yuck. Finn’s first words are going to be, “Zoey, NO!”

I need to do a little prep for training tomorrow and then I’m going to read and get to bed early. We start at 7:45 a.m. on Sundays and I have a full day of training followed by a drive back to Charlotte.
