Welcome Back Sushi

Oh my goodness. This year is off to a crazy start. I haven’t stopped moving since I arrived back in Charlotte on Tuesday…and I’m writing this to you from a hotel room in Tennessee. I’m here to lead weekend 7 of 8 of our 200-hour yoga teacher training. I can’t believe we are almost done!

This little guy is growing and changing like crazy. His first tooth has come in (bottom right!) and he’s starting to enjoy food. Sleep has been all over the place for both of us as we’ve been working on sleep training, we’re in the middle of a leap and he’s decided he wants to crawl all over his crib and pull up on the sides. Ahhh!

Workouts this week have been…non-existent. There has just been way too much going on. I was in a good every other day groove in Florida but that went out the window as soon as I got home.

Here’s what food has been looking like…

BREAKFAST

Two eggs scrambled in butter, a blueberry muffin and a mandarin.

Greek yogurt bowl with plain 5% Fage with dark cocoa powder mixed in and topped with cherries, granola, coconut, cacao nibs and peanut butter.

Smoothie bowl with homemade granola.

Overnight oats + chia seeds in an empty peanut butter jar.

LUNCH

Not sure when this turkey sandwich obsession will end.

Acai bowls while I was in Florida with my fam. I introduced my grandmother to them and she loved it! Big thanks to a reader/IG follower for recommending this place!

DINNER

NYE pizza + salad.

Brown rice topped with roasted sweet potatoes and beets, feta, hummus and a fried egg.

Hotel room service quinoa and kale salad topped with salmon.

Takeout sushi in the hotel room for dinner tonight. I have been SO off sushi for months but craving it for the last few days. It was delicious and I was glad to have it back in my life.

ETC

I’ve been on a hiatus from cake and cheesecake after I ate my dad’s 14 layer cake 5 nights in a row in Florida. Haha. I have had a couple of bowls of ice cream and lots of Christmas chocolate!

Okay, I need to answer some emails and then hoping to be lights out by 9:30 p.m. I am so tired.

Hope the first week of 2019 has been kind to all of you. xoxo

How often do you eat sushi?

Have you changed anything about your eats in the new year or are you doing what you always do?

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]

Moab Run The Rocks Race Recap (3 Day Stage Race)

I cannot believe it’s been nearly a month since I completed Moab Run The Rocks! It’s a three-day stage race in Moab, Utah that’s put on by the same race organization, TransRockies Rockies Race Series, that I did my six-day Colorado race with back in August. TransRockies truly excels when it comes to planning and [...]

Moab, Utah Trip Recap (put this on your bucket list)

I recently spent four nights in Moab, Utah for a three-day stage trail race called Moab Run The Rocks.
