A Warm February Weekend

After a very cold week, it was sunny and warm in Charlotte this weekend. We stayed close to home and spent tons of time outside.

WEEKEND OUTSIDE

The weather was so nice that I wanted to be outside as much as possible. Finn seems to enjoy the fresh air as much as me and the girls do. On this particular walk he babbled the WHOLE time. I was talking with my grandmother on the phone and she was cracking up at him.

We also met up with a friend who lives in the neighborhood at the park. She has a 4.5 month old. The boys did some swinging and it was super cute.

On Saturday morning Virginia came over for a run/walk. And then on Sunday my friend Jen came over for a run. It was awesome to have company…and also awesome to be running in shorts and a tank!

It was so nice to have friend dates sprinkled throughout the weekend. 🙂

WEEKEND EATS

I went to The Fresh Market on Friday evening and picked up some of their pre-stuffed chicken breasts. They are good and easy to pop into the oven. On the side I did roasted broccoli and roasted potatoes. I read an article last week that said the secret to extra crispy roasted potatoes is to boil them first. Of course I had to try it and it worked. They were super crispy and delicious! (And I dipped them in ketchup…it’s a must for me.)

I wanted to eat a leftover burger on Saturday evening but didn’t feel like going to the store to buy buns. Since we were just hanging around the house, I decided to try making my own hamburger buns for the first time. I used this recipe from King Arthur.

The buns were very easy to make and baked up perfectly. Texture and taste were spot on. The only ingredients were flour, water, butter, yeast, egg, sugar and salt. This is what I love about home baking…short and simple ingredients list!

I popped the rest of them in the freezer to pull out for sandwiches or just really delicious dinner rolls.

Here’s my plate! I reheated Friday’s roasted potatoes in the oven in a cast iron skillet so that they would be crispy again. My burger was topped with the English Coastal Cheddar from Trader Joe’s and also had Dijon mustard, mayo and ketchup. Oh and bread and butter pickles because you know they are my thing right now. I also made a salad with spinach, arugula, honey, olive oil, balsamic, dried cranberries, candied pecans and goat cheese.

And my Sunday night dinner was a frozen pizza. I was going to bake some tofu and roast cauliflower but I lost steam and this sounded like a good Super Bowl dinner. I did a Whole Foods Mediterranean pizza and added leftover chicken from Friday night and extra feta to it. Yum!

THE LITTLE AND THE FURRY ONES

Now that Finn is crawling all over the place, he loves getting into the girl’s toys, bones and water bowl. He loves to stick his hands in it. So the water bowl spends half the time on the counter and I have to remember to put it back down for the girls!

Speaking of these two…they continue to be great big sisters and are doing so well with Finn. It’s very sweet.

Last baby thing. Finn cut his two top teeth over the weekend! Overall, he was in a great mood through it but we did do early bedtimes on Saturday and Sunday night. He went down at 5:45 p.m. on Saturday and 6:45 p.m. on Sunday. I was worried he might be up crazy early (especially on the 5:45 day!) but he slept until 6:20 a.m. both days. I think he really needed the extra rest. Growing those teeth is hard work. 😉

Needless to say this is what my Super Bowl plans looked like. To be fair, I have never been a big Super Bowl person to start with…or NFL football for that matter. I much prefer college. I did have it on in the background and caught the halftime show…which I found to be disappointing. Anyone else?

Lots to tackle this afternoon so I’m off to be productive.
