Recent Eats + Workouts: PB & Chocolate Love

I hope that Monday was kind to you.

While my weekend in Hershey was a million times more amazing than I ever could have dreamed, it was still the best ever to be home with my crew this morning. We enjoyed a very low-key day that included lots of snuggles, a long walk and a trip to the grocery.

I have some recent eats to share with you today, along with last week’s workout recap…which you’ll find to be a stark contrast from the week prior. Never know what I’m going to get these days!

LAST WEEK’S EATS

I had a smoothie bowl every single morning except for this one where I had two eggs scrambled in butter, an orange and a Dave’s Killer Cinnamon Raisin Bagel with butter.

I did mix up my lunches a tiny bit. On two different days I had a salad.

Topping choices of the week were beets, avocado, dried cranberries, candied pecans, feta and canned salmon.

And of course…

I love baked tofu from time to time. You can find a tutorial in this post. I served it with roasted cauliflower and mushrooms, steamed basmati rice that I cooked with coconut oil, sea salt and chicken broth and a really awesome vegan sauce made from raw cashews, cilantro, chickpeas, olive oil, nutritional yeast, curry powder and more. This was my meatless Monday dinner! 🙂

Sushi dinner. If you live in the Charlotte area, you must check out New Zealand Cafe! It’s nothing fancy but it’s so good…and affordable!

You saw my Friday and Saturday night dinners but this was Sunday’s airport dinner. I was there for three hours before my fight back to Charlotte and starving. I had a turkey wrap with bacon and cheddar cheese. It was served with salt and vinegar housemade chips. I dipped the wrap in ranch.

Desserts have been all about chocolate and peanut butter. Yum. If you haven’t tried this Ben & Jerry’s flavor, I highly recommend. It has huge chunks of peanut butter cups in it. It kind of reminded me of a Reese’s blizzard at Dairy Queen.

Okay, Ashley gave me this ridiculous brownie with peanut butter frosting and a Reese’s cup at teacher training on Sunday. I ate the whole thing sitting in the airport. It was crazy delicious.

I also had a Reese’s Egg and a Cadbury Egg over the weekend because I couldn’t resist the Easter candy at CVS. 🙂

And PSA! All of the good chocolate is on sale at Whole Foods this week! I’m guessing it’s due to Valentine’s Day. I bought myself some today.

LAST WEEK’S WORKOUTS

Monday: 2.6 mile walk

Tuesday: 3 mile run, 2.5 mile walk

Wednesday: REST

Thursday: 3 mile walk

Friday: REST

Saturday: REST

Sunday: REST

I don’t think I’m going to get back into sharing my workouts every week at the moment, but I wanted to show you guys last week’s workouts as a contrast to the week before. Nothing is a guarantee these days due to baby and work so I just fit in what I can and what feels good.
