Little Pizza Lover

It is such a beautiful Monday here and I’m so looking forward to the week ahead. I am working on some great projects and really digging my weekly groove/schedule right now. I’m also excited that my week will end in Florida. 🙂

The only thing I am not really looking forward to is a CPR/First Aid recertification that is going to require a lot of computer time and an in-person skills class. While I’m always glad that I brushed up on my skills once I do it, (especially given my work in fitness and having a child), it feels like an annual “chore.”

Before I launch into the new week, here’s a look back at the weekend.

After taking a 10-15 minute car snooze while driving home from running errands on Friday, Finn decided that would suffice for his afternoon nap. We ended up spending about an hour and a half in his nursery. He crawled all over the place while I organized all of his clothes. I pulled out the stuff that doesn’t fit anymore and went through a lot of hand-me-downs that I have for 12-24 months. A friend of mine gave me the most amazing bin of little boy clothes while I was pregnant. Get ready for some ridiculously cute outfits.

Friday was rainy but it all cleared out around 5p so we headed out for a run/walk. Finn, Zoey and I ran 3.3 miles and then we swung back by the house and picked up Sullie for a walk.

It was one of those walks where I felt like I was fully taking in the experience and feeling so grateful for the gorgeous evening and the fresh air.

While we were walking, my grandmother asked me what Finn was having for dinner. I commented that I wasn’t sure but once I got home I spotted a slice of leftover pizza in the fridge. I decided it was Friday night and a great occasion for Finn’s first pizza experience. Y’all…he went crazy over it. I have never seen him eat so enthusiastically. He ate almost a whole slice! Finn’s newfound love for pizza made me very happy.

I was in desperate need of a grocery trip + it was late and I didn’t feel like cooking after I got Finn down so I pulled a Love the Wild Fish Taco Bowl out of the freezer. It was ready in under 5 minutes and tasted great. I added half an avocado and a dollop of plain greek yogurt to it. More on Love the Wild very soon! 🙂

Next stop was bed, ice cream and a movie. I stayed up until midnight watching Instant Family. It was a great easy watch. I really enjoyed the movie.

We spent most of Saturday morning hanging out around the house and tackling a lot of laundry folding and organizing/picking up. Finn was a great help.

We did get out for a walk with the girls before his dad picked him up.

Once Finn was gone, I packed up and headed out for an afternoon of yoga. I took class at 2:30p and then taught class at 4p at Charlotte Yoga.

I kept Saturday evening very low-key.

Whole Foods maple almond crusted salmon

I stopped into Whole Foods on the way home and got this maple almond crusted salmon. I roasted some brussels sprouts and kabocha squash to go with it. I was actually really impressed by how delicious this salmon was. And the brussels I tossed with dijon, lemon juice, honey and parm. I’ll post the recipe soon.

Bedtime treat while pumping was a brownie with Ben & Jerry’s Peanut Butter Cup ice cream. I was asleep by 10:15p!

On Sunday morning I subbed yoga classes at 8 a.m. and 11 a.m. and wrote a blog post in-between. I picked up Finn around 12:30 and we headed straight to ALDI to stock up.

The whole time we were shopping, Finn held onto my sweatshirt. It was so sweet.

I’ll have a post with all of the things I bought later this week. It was a lot!

Our Sunday ended with a walk with the girls and cooking a good dinner. Finn had a rough time going down last night and a woke up a ton. He’s a little congested but no fever. I’m not sure if it’s allergies or a mild cold but I’m going to keep my eye on him. He’s acting super happy so hopefully it will pass.
