A Beautiful Run + Lots of Eats

Hello, hello! I just got back from a glorious 6.5 mile run. It was 65 degrees, sunny and low humidity. Oh and FLAT! My elevation gain was 58 feet and that’s only because I ran up a bridge. Gotta love Florida running. This kind of weather makes me feel like I want to run forever.

My run was also sans running stroller so that was extra amazing. I took advantage of my last morning in Florida and had my mom and grandmother stay with Finn during his morning nap. I returned an hour later to find that he’s still sleeping! I’m very grateful that he is starting the day with a solid nap. This means he’ll be a much more amenable travel companion later today. 🙂

We’ve had a great extra long weekend with my family and I’ll have more photos to share tomorrow when we’re back in Charlotte. For today, lots of good food for ya!

BREAKFAST

Kodiack Cakes with Toppings

We’ll start with this morning’s breakfast creation. It was something different for me but really tasty. A Kodiack cake (made with milk and an egg) topped with peanut butter, banana, plain yogurt, granola and strawberries. This combo was one that I will repeat!

LUNCH

Egg salad sandwich

Egg salad avocado, tomato and cheese on wheat. The egg salad was just two hardboiled eggs mashed with some mayo and salt.

Mixed greens tossed with my honey dijon balsamic vinaigrette and topped with chopped hardboiled egg, havarti, avocado, chickpeas, pecans and dried cranberries.

DINNER

Some great dinner ideas for you today!

Lemon parmesan panko crusted chicken breast

Lemon parmesan panko crusted chicken breasts topped with a little marinara sauce. Steamed green beans and couscous on the side.

Same thing, add some leftover kabocha squash.

Grilled cheese made with sourdough, two kinds of cheese, avocado and apricot preserves. Pressed in a cast iron skillet and cooked with butter. Leftover roasted brussels sprouts on the side.

Grilled chicken thighs with roasted cauliflower and a salad with spinach tossed in this same balsamic vinaigrette, avocado, sharp white cheddar, pecans, strawberries and dried cranberries.

Panera You Pick Two

Finally, Panera takeout. Fuji apple chicken salad, broccoli cheddar soup and a baguette that I ate with butter.

DESSERT

ALL THE ICE CREAM. I ate two pints at home last week and then got started on this one in Florida. For the record…I don’t think the Greenwise cookies and cream is as good as the conventional Publix store brand.

Okay, baby is awake and I need a shower and lunch! See you back tomorrow.
