Ice Cream Every Day

Upon waking on Sunday morning I immediately thought to myself “there is no way I can be home by myself with Finn all week.” First, Finn is on the move and all but running around the house as of late. Second, both my bedroom and Finn’s nursery is upstairs and stairs are definitely the hardest part of getting around. I decided that since I couldn’t teach that I might as well head back to Florida. My grandmother’s condo is a much more contained environment, there are no stairs and I have some help here!

I booked a flight at 2p and was in Florida by 6:30p. Thank goodness for AA frequent flier miles. I got a round trip ticket for 12,500 miles, and at the very last minute. Had I paid full fare it would have run me over $700.

The tricky part was the logistics of getting here. Dorie came over and helped with Finn while I packed. I drove us to the airport but was able to park right next to a bus shelter. I had kind people help me get Finn and my suitcase on the bus. The driver dropped me off right at the terminal and I asked for assistance as soon as I got there. After my bag was checked, Finn and I rode in a wheelchair to the gate. That was definitely a first but there’s no way I would have made it otherwise. On the plane, we had a whole row to ourselves, which was awesome. Wheelchair assistance again upon arrival until we were delivered to my mom.

There were moments where I questioned my sanity in traveling with a one year old and a bum foot but once we got here it was worth it. I didn’t sleep well at all last night. Why do things always seem to hurt worst in the middle of the night!? I finally got up for the day around 4:15a. I rationalized to myself that it was 5:15a EST so not too ridiculously early. Bright side, I got to see a beautiful sunrise and enjoy some quiet time outside before Finn woke up.

We’ll travel back later this week and then I’ll trade Finn back off with his dad. My friends and co-workers in Charlotte have been insanely helpful and kind so I know that we’ll be just fine.

Okay, how about non-foot related content? Here are some recent eats…some from the last time I was in Florida.

BREAKFAST 

Cinnamon roll (Annie’s Organic brand), fruit and cottage cheese scrambled eggs.

Homemade sourdough toast with peanut butter, honey and hemp hearts.

Cottage cheese scrambled eggs (having a moment with these lately and Finn loves them too) with half an avocado and fruit.

Half a Dave’s Killer Cinnamon Raisin Bagel (Finn ate the other half) with butter and cream cheese. Same scrambled eggs as above and fruit.

Can you believe that I’ve been kind of off smoothie bowls recently? I still eat them here and there but not every single morning.

LUNCH

I just went to add lunch photos and noticed I don’t have any! I’ve mostly been eating sandwiches…turkey and peanut butter and banana are faves.

DINNER

Cheeseburgers, salad and roasted potatoes.

My dad made the yummiest pork loin with cherry sauce last time I was here. Buttered rice and cheesy roasted broccoli on the side.

Spaghetti night. Here’s my favorite sauce recipe! A pre-packaged chop salad kit on the side.

Salad with baby kale massaged in lemon juice, olive oil and sea salt and topped with baked salmon, avocado and peaches. Get full details on the salad in this Instagram post.

Leftover salmon on top of baby kale and leftover steamed rice. Topped with tomatoes, feta and hummus and Tessamae’s creamy ranch.

My friend’s brought me a plate from a baby shower I was supposed to host on Saturday. I made dinner out of it along with cake that you’ll see below.

ETC

Ice cream. Every night. Did you know that July 21 was National Ice Cream Day? And PSA: ice cream is on sale 35% off at Whole Foods through the end of the month!

My favorite is having two flavors to mix and match.

That brings us to the end. Finn is up from his morning nap so off to hobble after him! 🙂
