Here I sit in a hotel room in Kingsport, Tennessee watching Twilight: Eclipse, snacking on Trader Joe’s Pumpkin Tortilla Chips and waiting for a burger to be delivered from room service. There is a MASSIVE soccer tournament in town this weekend and tons of families staying at this hotel. They are all just getting in from the day’s games so the likelihood that I am going to get my food anytime soon is slim to none. Ahhhh.

I’m here for weekend two of our 200-hour yoga teacher training at VIDA Hot Yoga. I’ll have a full recap on that later but for now, here are my eats from the last week or so.

BREAKFAST

Dave’s Killer Pumpkin Spice Madness bagel with butter and cream cheese. These are a seasonal offering from Dave’s and they are super yum.

Cottage cheese scrambled eggs, pumpkin banana bread and grapes.

Loving these THRIVE! smoothies blended with coconut water.

LUNCH

Still soaking up those last tomato sandwiches.

Ate this salad combo three times last week. Arugula, apples chickpeas, avocado, cashews, dried cranberries, feta, Blue Harbor canned salmon or albacore tuna and an ALDI ginger dressing.

And another one. This one had pears instead of apples.

Lunch with a friend at YAFO. This was a salad grain bowl with bulgur, spinach, kale, feta, cucumbers, beets, baba ganoush, tzatziki, kalamata olives, cilantro yogurt sauce and lemon tahini sauce. A fluffy soft pita on the side.

DINNER

Air fryer salmon and potatoes. Cannot wait to share more about my foray into air frying soon! Spinach salad on the side.

Leftover salmon over quinoa with sautéed spinach, feta, and hummus.

Roasted vegetable quiche with salad.

Baked tofu with roasted potatoes and brussels sprouts and topped with a nutritional yeast/chickpea/cilantro sauce. Love this meatless meal. Here’s an old but still relevant baked tofu tutorial.

Just really feeling grilled cheese right now. White cheddar, bacon, fig preserves on sourdough with lots of butter.

And that’s all. My burger just arrived so I’m off to enjoy it before heading to bed. (I’m actually already in bed because there’s nothing better than a hotel room, TV and bed!)
