Recent Eats: Bagels, Soup, Citrus + More

Happy Friday! I got Finn off to preschool this morning, met a friend for a run and am sitting down to write this post before I pack up and head to Tennessee for our last yoga teacher training weekend of 2019 at VIDA Hot Yoga! We’ll have just one more in late January and this one will be in the books.

Here’s a photo from a holiday shoot we did two weeks ago when I was in town for our last TT weekend. Really wish I could post all of the outtakes from this shoot because we had a good time. Haha. Love my VIDA family. <3

And now moving on to recent eats! For whatever reason, I have really not been feeling a lot of veggies lately unless they are cooked and preferably added to something like a soup, casserole, quiche, quesadilla, curry, etc. I can count the number of salads that I’ve had in the last month on one hand. I’m also pretty much off of smoothies at the moment. I have one a week or so but they just aren’t doing it for me.

What I am feeling is warm food, toast, bagels, citrus, rice, soup, etc. I think this all makes perfect sense given the season we are in.

BREAKFAST

I have been on a big bagel kick lately. I have also been craving citrus like crazy. This is a Dave’s Killer Cinnamon Raisin Remix bagel with butter and cream cheese and a blood orange.

Dave’s Killer Thin-Slice Sprouted toast with butter, cream cheese and cottage cheese scrambled eggs. Blood orange and blueberries on the side.

Cream of wheat cooked with milk and butter and topped with bananas, pumpkin butter and almond butter. This was a blast from the past! My mom likes cream of wheat and had left a box here a while ago. I decided to whip some up for Finn one morning. He wasn’t super interested but I loved it! Nice change of pace.

Smoothies just haven’t been doing it for me lately so they have been few and far between but here’s a smoothie bowl full of berries.

LUNCH

Lots and lots of soup. I crave it constantly. This turkey noodle with potatoes, carrots, celery, turmeric and ginger that I made last week was so yummy. (based on this recipe)

When I’m not eating soup, I’m eating PB+B.

One day I was craving brunch for lunch and did avocado sourdough toast topped with an egg and curry seed salt.

Another day I had a lunch meeting where I had this cheesy spinach florentine quiche and ratatouille at Renaissance Patisserie. If you’re in Charlotte, this is a great spot for casual French food and French sweets.

DINNER

Chicken, cheese and spinach quesadilla served with avocado and lime crema dipping sauce. I ate this two nights in a row because it was so good.

Homemade chili and cornbread.

Thai takeout with my mom. This was a red curry with lots of veggies and tofu.

And finally, a Blue Apron shrimp, mushroom and bok choy stir fry dinner. I actually ended up eating both servings in one night because I was starving and it was really good!
