Super Eats

I am sitting on the couch watching the Super Bowl in the background. I got home from graduating my VIDA Hot Yoga teacher trainees from their 200-hour this weekend…and I am sick with a respiratory infection and no voice! Like I cannot speak above a whisper and I’m coughing like crazy. I feel like this has been the worst sickness season that I can remember in many, many years. I’m ready for it to be over as I feel like I’ve been fighting off colds since Thanksgiving.

This Super Bowl is not particularly interesting to me because I prefer college football over NFL and I really don’t know much about either of these teams. Once I get my voice back, I want to call my dad and ask him if I am remembering correctly a Super Bowl when I was little where we got to eat Domino’s thin-crust pizza on a 49ers blanket in while watching it. I vividly remember it being a huge deal to get to eat in the living room on a blanket while watching TV. I think this memory is valid because a quick Google search tells me that the 49ers won 5 Super Bowls between 1981 and 1994. (I’m an 83 baby.)

And now let’s switch to recent eats!

BREAKFAST

Fage Total Plain 5% with defrosted frozen cherries and blueberries, diced banana, peanut butter, granola and dried cranberries.

Dave’s Killer Plain Awesome bagel with butter and cream cheese, cottage cheese scrambled eggs and two tangerines.

Maple Carrot Oat Banana Bread warmed with butter, cottage cheese scrambled eggs, orange slices.

Homemade plain yogurt, homemade granola, bananas, strawberries, raspberries and peanut butter.

Scrambled eggs + homemade plain yogurt, homemade granola, banana, raspberries and peanut butter.

LUNCH

Baby spinach tossed in my homemade honey dijon balsamic vinaigrette and topped with avocado, strawberries, grapes, avocado, toasted pecans and chicken salad.

A light lunch of half an avocado stuffed with chicken salad.

Corned beef, tomatoes, cheese, dijon mustard and mayo on homemade sourdough.

DINNER

I love corned beef and cabbage and my dad made this meal for us the night we arrived in Florida last week.

Thai red coconut curry takeout.

Sriracha baked salmon, roasted broccoli and stems and baby portobello mushrooms and roasted acorn squash. I topped the fish and broccoli with sriracha aioli.

Steamed white basmati rice tossed in sesame oil and rice vinegar and topped with pan-seared sesame crusted tuna, edamame, sautéed baby bok choy and sriracha aioli. True story: Zoey ate the first piece of defrosted fish RAW off the counter. I don’t even know how she got to it. She is Houdini. I went to put Finn down and came back to find the fish mysteriously missing. 😉

Easy pasta skillet with satueed onions, garlic, mushrooms and artichoke hearts. Add shrimp, spinach, pasta, sauce and cheese.

All together. Took me less than 20 minutes to prepare!

ETC

My mom made me a personal pan of my favorite homemade banana pudding while we were in Florida. This recipe is so yummy and don’t forget to try my peanut butter banana pudding recipe! 🙂

Off to watch the last three minutes of this Super Bowl game that has gotten very interesting! I am not cheering for either team but I very much appreciate good football…which this is turning out to be!
