Hi friends! I rolled into the gym at the early hour of 6a this morning to kick off my work day. I trained three small groups (all are friends who workout together) and three one-on-one clients and it was an awesome morning of training.

queens college Charlotte cherry blossoms

I wrapped up my clients around 12:30p and took off on a run. It was a GORGEOUS day for a run and my body was feeling ready for it. I did five miles through Myers Park and enjoyed the scenery with the first of spring blooming!

5 mile run

Didn’t set out with intentions of doing a tempo progression run but that’s what it turned into. So needed this run and felt amazing after.

For the rest of today’s post, I have lots of food content for you. It starts with what I bought on my last trip to Whole Foods and then moves into recent eats for breakfast and lunch. Dinner will be in the next post.

WHAT I BOUGHT AT WHOLE FOODS

Whole Foods produce haul
  • Taylor Farm’s Honey Citrus Chopped Kit – first time trying and was good!
  • A head of green cabbage
  • Honey Bombs cherry tomatoes
  • Gotham Green spring mix – this was a good mix but so voluminous in the container that I really only got one good salad out of it
  • Bananas
  • Strawberries – these were good but strawberries have been SO hit or miss this season. I have had some truly terrible strawberries.
  • Brussels
  • Love Beets pickled beets – really like these for salads
  • Carrots
  • Avocado
  • Champagne mangos – first time seeing these out for the season and they were not as sweet as they usually are so maybe a little early
  • Sumo mandarins
what I bought at Whole Foods
  • Nature’s Own honey wheat bread
  • 365 Sea Salt Kettle Chips
  • Brew Dr. Clear Mind kombucha – probably my all-time favorite kombucha flavor

  • Barley & Lentils ready to eat mix
  • Dave’s Killer Plain Awesome bagels
  • Flour tortillas – I have no plan for these…just saw them and wanted tortillas

  • Chicken thighs
  • Applegate Sweet Italian chicken sausage
what I bought at Whole Foods

His + hers breakfast. I had a yogurt bowl with vanilla yogurt, strawberries, blueberries, bananas, blackberries, dried cranberries, granola and peanut butter. Finn had homemade banana oatmeal, bacon and a frozen hashbrown from Trader Joe’s.

I pack this breakfast a lot to eat at the gym between clients.

Scrambled eggs, sourdough toast and fruit.

RECENT EATS – LUNCH

lunch salad ideas

Mixed greens, balsamic, olive oil, sea salt, chopped deli chicken, pickled beets, feta, cherry tomatoes, avocado, toasted pecans and dried cranberries.

Trader Joe's canned salmon on salad

Mixed greens, grain blend, Trader Joe’s canned lightly smoked salmon, candied pecan and dried cranberry blend, cherry tomatoes, avocado, feta, olive oil, sea salt and balsamic.

salad bowl idea

The Taylor Farm’s chopped salad kit from above with lots of yummy additions – roasted sweet potatoes, toasted pecans, avocado, pickled beets and deli chicken.

salad bowl with just bare chicken nuggets

Mixed greens, olive oil, balsamic, sea salt (I know I’m repetitive about this but you have to salt your greens to make them taste extra delish!), strawberries, chickpeas, feta, dried cranberries, carrots, candied pecans and air fried Just Bare chicken nuggets.

tuna melt

Tuna melt with avocado and cheddar cheese on sourdough. For the tuna I just mixed a can of tuna with a little mayo, plain yogurt, chopped sweet pickles, salt and pepper.

salad bowl with chicken and delicata squash

Spinach and arugula blend, olive oil, balsamic and sea salt, roasted delicata squash, leftover air fried chicken breast, avocado, chickpeas, dried cranberries, pecans and feta.

salad bowl with air fried tofu

Mixed greens, balsamic, olive oil, sea salt, leftover air fried tofu, pickled beets, roasted sweet potatoes, avocado cherry tomatoes, pepitas, feta and dried cranberries.

turkey sandwich

Can’t get through one of these recent eats posts without a turkey sandwich. On honey wheat with Duke’s mayo, avocado, sweet pickles, colby-jack cheese and mustard. Chips, a pickle and an apple on the side.

RECENT EATS – ETC

salted caramel perfect bar

THE BEST PERFECT BAR FLAVOR! I picked this bar up in Park City. I used to be able to find it at Publix and Target and now they’re not carrying it. I just looked online and the only place I can get it in store in Charlotte now is Sprouts. I’ve never been there and it’s a little out of the way. I need to start ordering them in bulk from Perfect Bar online.

rishi valerian dream tea

Cannot recommend this Valerian Dream tea from RISHI enough. I drink a ton of hot tea but I’ve just started getting into RISHI teas in the last year or so. I love the sachets and this one is full of pre-slumber bliss with valerian root, cardamom, licorice root, fennel seed, strawberries, spearmint, natural rose extract, rose petals and essential orange oil.

And that’s a wrap for this one. I’m off to teach yoga and then meeting Dorie for dinner!

QUESTIONS

What are your favorite tea brands and flavors?

Give me your bar recommendations! I need some new inspiration for my gym bag. Trying to be better about eating a late morning snack since I typically don’t eat lunch until like 2p.

Moab Run The Rocks Race Recap (3 Day Stage Race)

I cannot believe it’s been nearly a month since I completed Moab Run The Rocks! TransRockies truly excels when it comes to planning and [...]
