Good morning and Happy Mother’s Day! I am overdue a recent eats post so that’s what I have for you today. Lots of good and simple stuff to share. I haven’t felt much like cooking lately so most of what you’ll find below is easy to prepare and requires minimal cooking.

BREAKFAST

The prettiest (and tastiest) purple smoothie with Cascadian Farm Cinnamon Crunch cereal on top. Pretty sure this smoothie had all the normal stuff in it – frozen mixed berries, frozen banana, frozen cauliflower rice, frozen spinach, plain greek yogurt, peanut butter, a date and some oat milk.

I’ve been on quite the hard-boiled egg kick lately. And still going strong on my love for cottage cheese. My favorite brand is Good Culture and I like their 4% milk fat or double cream.

I’ve eaten a lot of yogurt bowls lately. Plain Fage Total 5%, honey, banana, strawberries, blueberries, Purely Elizabeth Blueberry Hemp granola, peanut butter and dried cranberries.

Cottage cheese scrambled eggs cooked in salted butter, half of a Dave’s Killer Cinnamon Raisin Remix bagel and fruit.

LUNCH

Salad and avocado toast on sourdough. Salad was yummy and had spinach, tomatoes, olives, peppers, pistachios, chick peas, feta and creamy Italian dressing.

I eat a lot of sourdough toast for lunch these days. This was one slice with butter and fig preserves and one with butter, avocado and hemp hearts. Pineapple on the side.

Another salad! I tossed the spinach in lemon juice, honey and olive oil with a bit of sea salt and then topped it with avocado, strawberries, tomatoes, pistachios, chick peas, feta and dried cranberries.

I do still eat turkey sandwiches with avocado, cheese and sweet pickles from time-to-time. I love them on Nature’s Own Honey Wheat.

Another sandwich on honey wheat but this one with peanut butter, honey, sea salt and banana. Cheddar bunnies on the side because why do cheese crackers taste so good with peanut butter sandwiches?

DINNER

Trader Joe’s cauliflower gnocchi cooked in the air fryer and topped with sautéed chicken sausage, sun dried tomatoes and spinach mixed with jarred vodka sauce. I cooked the gnocchi on 390 for about 12-13 minutes. It helps the cauliflower gnocchi not to be gummy. This meal took 15 minutes to make.

Another Italian bowl with frozen cheese ravioli topped with sautéed mushrooms and vodka sauce. Also took under 15 minutes to assemble.

Salad with local mixed greens, carrots, tomatoes, pistachios, shredded white cheddar, olives, salmon and creamy Italian dressing.

Baked potato with butter, plain greek yogurt, white cheddar cheese and sautéed mushrooms, peppers and zucchini. I ate this two nights in a row.

Homemade pizza with sourdough crust. I really wanted a plain pepperoni pizza but my pepperoni was past its prime so I did artichoke hearts, prosciutto and sun-dried tomatoes instead.

I made my veggie-packed turkey meatloaf but with ground beef instead of the turkey and it was so, so delicious! Finn and I both gobbled this up, and enjoyed the leftovers!

Finally, take out sushi.

ETC

I have the BEST etc to share with you today! I made these brownies with cream cheese swirl a couple of weeks ago and they are one of my favorite things I have baked in a long time! (Well, in addition to this carrot cake!) They were so fudgy, perfectly chocolatey and the cream cheese swirl added so much! I used this recipe but instead of piping the cream cheese, I just dolloped it on top and swirled it around. I didn’t really care what it looked like, haha. These brownies are so good and give my salted fudge brownies a run for their money!

This was a rare instance where I actually preferred the brownies on their own without ice cream!

And that’s all I have for you today. I’m off to pour another cup of coffee and to get ready for the final session of the weekend yoga training that I am taking for my 300-hour certification. My little guy comes back to me around noon and I’ll spend the rest of Mother’s Day soaking him up! 🙂
