Happy Thursday! I made Finn chocolate chip Kodiak Cake waffles for breakfast this morning and I can’t stop snacking on the leftovers. Lots of good food coming at you in this recent eats round up. Being in the kitchen has been making me happy lately. I hope you enjoy!

BREAKFAST

yogurt with granola and cranberry sauce

Plain greek yogurt, honey, bananas, granola, homemade cranberry sauce and peanut butter. This was a great breakfast!

English muffin with peanut butter and banana

Dave’s Killer Bread English muffin toasted with peanut butter, honey and bananas. Grapes on the side. Also, black coffee. I drink 2-3 cups every morning and the first cup always has a scoop of collagen powder added to it.

apple cinnamon oatmeal

Apple cinnamon oatmeal with raisins and a bit of cottage cheese stirred in. Almond cashew butter on top. I made this oatmeal because Finn told me he wanted it for breakfast. I sautéed the apples and raisins in coconut oil with some cinnamon until they were soft and then added oats, milk, water and a dash of salt. I served Finn’s with the nut butter stirred in and mine with the cottage cheese stirred in and nut butter on top.

LUNCH

Grilled cheese with muenster cheese and avocado on homemade sourdough. Cooked with lots of butter and smushed down in a cast iron skillet. Homemade carrot butternut ginger soup on the side.

Open-faced turkey sandwich with mayo, avocado, turkey, apple slices and colby-jack cheese with apples and a pumpkin butternut bisque from Trader Joe’s on the side.

This is an awesome salad combination. Mixed greens, hearts of palm, avocado, cherry tomatoes, watermelon radishes, carrots, deli honey turkey, pepitas, goat cheese, dried cranberries and white balsamic dressing from Whole Foods.

Homemade carrot butternut ginger soup with hardboiled eggs, apple slices and buttered sourdough toast.

DINNER

Here’s the quiche you saw in my lunch eats. I made a broccoli cheddar quiche from scratch one night and proceeded to eat the entire thing over the next few days. I love quiche and rarely make it.

The most arduous part of making this quiche was the homemade crust because the recipe I used was not the best but the filling was so easy and only took a few minutes to prep. I didn’t even have to precook the broccoli florets.

three ingredient pot roast

I have been super in the mood to cook lately and this week I made my three ingredient pot roast with mashed potatoes and braised red cabbage with apples and onions. I haven’t made this recipe in years and was craving it so I picked up a bone-in chuck roast from one of my favorite farmers at the market on Saturday. I’ve eaten this dinner twice this week and will have it one more time tonight. So yummy! I also love using the leftover beef in enchiladas.

Here is a big dinner salad with mixed greens, hearts of palm, tomatoes, watermelon radish, sliced almonds, goat cheese, avocado and salmon with a creamy Italian dressing.

Frozen pepperoni pizza (Whole Foods 365 store brand) with a side salad of mixed greens tossed in olive oil, honey, balsamic and sea salt and topped with dried cranberries, pistachios and goat cheese.

I ordered Thai takeout last Sunday night when Finn and I got home from our outing to the Daniel Stowe Botanical Garden holiday event. Red coconut curry with tofu and extra veggies. I had this delivered from Aroy Thai.
