Sleep is Good

After NINE solid hours of sleep last night I feel like a completely new person. I had reached the point of exhaustion and a good night’s sleep was exactly what I needed. My energy levels were much higher today and the on and off headache I’ve had for the last five days finally went away. Sleep is good and so necessary for your body to heal and restore itself.

Before I launch into today’s recap, I promised an overview of yesterday. It started with banana oats. I made a smaller serving since I thought I was going to lunch with my co-workers. We ended up postponing lunch until Friday so I was famished by noon. I recruited this guy for a lunch date.

We met at Panera and enjoyed lunch on the patio. I pre-planned my order by checking out Panera’s online menu and nutrition information before lunch. I find this especially beneficial when I’m going out for lunch. It helps me make smarter lunch choices. Yes, I wanted the Broccoli Cheddar Soup that my husband ordered but with half the calories and a fraction of the fat, the Vegetable Soup with Pesto was a much better choice. The only thing that kills me about Panera is that all of their food is loaded with sodium. It is definitely an every now and then treat.

I ordered the You Pick Two with Vegetable Soup, Fuji Apple Chicken Salad (with no chicken) and whole wheat baguette.

Despite our lunch out, we were both starving for dinner last night so I cooked an early dinner. We ate before 7 p.m. which is a HUGE accomplishment for us. I’m usually lucky to have dinner on the table by 8. We haven’t made it to the store yet this week so dinner was a pantry/fridge concoction.

What I came up with was Goat Cheese Veggie Pasta. Here’s what I did…

Cooked about 1/3 a box of whole wheat penne pasta. While the pasta was cooking, I sautéed 1/4 a Vidalia onion in some olive oil with 1 clove of garlic and some red pepper flakes. I added 1 chopped tomato, a splash of white wine and fresh basil to the pan at the end. I reserved about 1/4 cup of pasta water and drained it. Mixed together the pasta and veggie mixture and then stirred in about 3-4 ounces of goat cheese and tossed it to create a sauce. I thinned it out with the pasta water as necessary. Voila! Dinner in about 20 minutes. Served with a side salad.

Last night Brandon was really craving dessert. I’ve been going on and on about how he needed to try the new frozen yogurt places so we decided to head over to SouthPark Mall and go to Yoforia.

Can you guess which one is Brandon’s and which one is mine!? I had a little bit of the original plain tart and a little vanilla. Topped with kiwi, shredded coconut, strawberries, graham cracker crumbs and some granola. Brandon’s had three different kinds of chocolate yogurt and I don’t know how many different toppings. He loved it. We can’t wait to go back!

Breakfast was Banana Oats again this morning (surprise, surprise). Lunch ended up being a bit of a last-minute ordeal. I was planning on coming home for lunch but ended up having to go to two different post offices to track down a letter so I ended up only having a second to run in and let Sullie out and grab lunch to take back to the office.

Tomato soup and Goldfish. I told you we haven’t made our weekly shopping trip so this was the best I could do in a pinch. Later I snacked on half of an apple with a cup of Jasmine Green Tea.

I went to a hot vinyasa class tonight at Y2. I haven’t practiced since last Tuesday so I was really looking forward to class all day. It was awesome and exactly what I needed. Also, my yoga studio is having a 3-hour yoga boot camp Saturday afternoon and Sarah and I have registered. I attended their first boot camp several months ago and it was an amazing challenge that left me completely spent and happy. So looking forward to this one!

Brandon cooked a frozen pizza and when I got home from yoga at 8:30 it was the easiest thing to grab for dinner.

I will finally be making a trip to the grocery tomorrow so I can resume cooking and healthy eating. Blah…over pantry and frozen food and ready to get back to weekly menu planning and cooking every night!

The building management at work is having a tenant’s lunch tomorrow. Apparently, it is Mexican themed. I’m a little unsure of the food options so I’m planning on bringing a backup lunch just in case. Sometimes a little planning is worth it to avoid unhealthy lunch options.

Hoping to get another good night’s sleep tonight – eight hours is looking possible!
