Don't Fear the Beets

Sorry that I didn’t get a post up last night but the last thing I wanted to do was open my laptop after a long day of work. Also, my throat is still bothering me so vegging on the couch catching up on Grey’s Anatomy sounded a little more appealing than blogging . 😉 And speaking of Grey’s…I’m caught up to the episode before the season finale. I heard the finale is pretty intense. Should I watch it or just read the recap online? No spoilers, please!

I don’t even know why I still tell you guys what I ate for breakfast. Obviously, it was a bowl of oatmeal – apple cinnamon oats. Repeat of yesterday’s mix. But I will say that I’m finally getting to the point where I’m craving a cold breakfast – maybe a smoothie or yogurt with granola and fruit – so I think you’ll see me mixing things up soon!

Lunch was fabulous. I picked up some ready-to-eat beets at Trader Joe’s after hearing Jenna talk about how great they were.

What better way to enjoy beets than on a salad?

This salad featured: baby greens, sliced beets, crumbled feta, diced roasted sweet potatoes (leftover from this dinner), almonds, a big crank of salt and pepper and homemade balsamic vinaigrette.

He wanted no part in the beet salad creation and instead ate a massive sandwich of turkey, avocado, tomato, mayo, ranch and baby greens on whole wheat. While he was eating it he deemed himself the best sandwich maker in Charlotte.

My snack yesterday afternoon was a Cherry Pie Larabar. My favorite flavor.

Would have been great except that I seriously bit my lip while eating it and it’s still sore now. 🙁 Hate that.

Against my better judgment, I decided to go to a power mixed class at Y2 after work. I was definitely not feeling 100% but Advil + my burning desire to practice got me to my yoga mat. Class was good and not too challenging – which was a positive thing last night. We got to work on forearm balance, side crow and handstand so I was a happy girl. Love arm balances and inversions (I think it’s all the years of cheerleading and tumbling coming out in me!).

Came home, showered and crashed on the couch for my Grey’s Anatomy marathon (Brandon was at bowling league). I finally peeled myself off the couch around 8:30 and headed into the kitchen to make dinner. I had eggs on the brain but was also craving a quesadilla. I decided to give in to both cravings and made a scrambled egg quesadilla.

Scrambled eggs, black beans, diced jalepeno, white and orange cheddar, sour cream and salsa. YUM! Totally hit the spot. Cantaloupe on the side.

After dinner ice cream was calling my name…

Blue Bunny Reduced Fat Ice Cream (about 1 1/2 scoops), sprinkle of Earth Fare Tahitian Vanilla Granola, shredded coconut, toffee bits, mini chocolate chips and chocolate syrup.

After dessert I had a cup of chamomile tea and then crashed. I slept so well last night but unfortunately, still woke up with the sore throat. I have to teach BodyPump tonight – hoping I can make it through and feel strong. Will let you guys know how it goes.

So two questions for you today:

1) Do you like beets? (such love/hate food!) And how do you like to eat them? (I have a ton to use up in the next couple days!)
2) Should I watch the season finale of Grey’s or just read the recap online? I’m ridiculously scared of guns and I hear there’s a shooter in the episode.
