It's Getting Hot in Here

The first day of summer might not officially be until June 21 but it has arrived here in Charlotte. It’s been in the 90’s since Friday and so humid! Brandon and I both grew up the South so we’re accustomed to hot and humid summers but those first few days are always a bit of a shock!

Sullie has a new favorite spot.

She lies right in front of the air vents. We can see her fur blowing in the wind. It’s hilarious. Tile + air vents = happy, cool dog.

Friday night we had my in law’s over for a casual dinner.

I set up a make your own pizza bar. Here’s what we were working with:

  • Trader Joe’s Pizza Dough
  • Red sauce
  • Pesto
  • Sundried tomatoes
  • Roma tomatoes
  • Gorgonzola
  • Mozzarella (fresh and shredded)
  • Artichokes
  • Caramelized onions
  • Sauteed mushrooms
  • Italian sausage
  • Prosciutto
  • Fresh basil

Everyone had fun assembling their own pizzas.

Brandon was really creative and made three different flavor combinations on his one pizza!

I went half and half. One side with a pesto base, Gorgonzola, caramelized onions, shredded mozz, sundried tomatoes and artichokes. The other side with a tomato base, fresh basil, prosciutto, mozzarella, mushrooms and a few more onions.

Brandon grilled the pizzas using this method.

On the side I made a big salad.

Baby greens, strawberries, tomatoes, almonds, feta, dried cranberries, salt and pepper. Topped with homemade honey balsamic vinaigrette.

My plate. Mmm…I love grilled pizza. The flavor of the crust from the grill is extra delicious!

Luckily it cooled down enough that we were able to enjoy dinner outside. Easy entertaining!

My alarm was set for 6:15 Saturday morning to meet Sarah at Y2 for a superflow class at 7:30. This was my first time going to superflow – here’s the description from the website:

“This intermediate level class honors all those yogis who have a passion for flowing. This class is designed to challenge your endurance and cardiovascular system through long sequences of flow repeated several times. Instruction is minimal, so a good understanding of asana is encouraged. Get ready to kick some asana with a playlist of uplifting beats. Come with an open mind and a happy heart.”

I’ve always wanted to attend superflow and I can’t tell you how many times I’ve set my alarm on a Saturday with intentions of going. I’m so glad I had meeting Sarah (and wanting to get my hot practice done before it got so hot outside!) as inspiration yesterday.

I was starving after coming home, showering and cooling off. I was craving a big bowl of oatmeal.

Banana oats made with oats, vanilla soymilk, water, pinch salt, half banana, raisins and cinnamon. Topped with almond butter and fruit spread.

The rest of the day was spent running errands, weekly farmer’s market trip, cooking and napping. We had tickets to see Phoenix last night and Sarah invited us over before the concert for a cookout.

I made this Whole Wheat Mediterranean Pasta Salad and banana pudding for the cookout.

I was a bad blogger and didn’t take any pictures at the cookout but it was fun! I had an Amy’s veggie burger, two types of pasta salad, banana pudding and a blueberry crumb bar + a couple of Corona Lights!

The Phoenix show was awesome. I was very impressed by their live show. We ended up getting seats in the second row and had a fabulous view of the stage.

And at the end of the show Phoenix did something I have never seen a band do – invited everyone up front on the stage. It was chaos. The next thing I knew Brandon was shoving me up there. I was a bit scared for my life but it was so fun!

Sweaty and gross but a super, super fun night!

We are getting ready to head out to brunch. Brandon’s craving pancakes! 🙂
