I feel so behind! I have so much to catch you guys up on. I planned on posting the rest of our Athens weekend recap last night but our plans changed and we ended up not getting home until after 11 p.m. I had a 5 a.m. wake up call to teach BodyPump this morning so I went straight to bed.

Bad news – I forgot to put my memory card back in my camera when we headed out for day two of AthFest Saturday so the day went mostly undocumented. I got a few shots on the internal memory of my camera but I can’t figure out how to get them off my camera and can’t find my camera cord (I use a built-in SD card reader on my laptop to transfer pictures).

Saturday was fun but a really long day. We headed downtown early to watch the USA World Cup game. After the disappointing loss we headed outside for AthFest and caught The Incredible Sandwich. They were probably my favorite band of the weekend. We had dinner at The Globe before heading back to AthFest for Perpetual Groove. I managed to score a bunch of free mini Larabars after I went on and on to the rep about how I discovered my love for Larabars at last year’s AthFest.

I was so exhausted from a long day in the sun and on my feet. My feet were so swollen by the end of the night. It was gross! After a good night’s sleep on Saturday I was ready to tackle a run Sunday morning. I can’t go to Athens without going on a run around campus. Fun memories. I covered about 4.3 miles. I didn’t time it – just enjoyed the run.

We decided to go kayaking on the Broad River Sunday afternoon (which caused the late arrival time in Charlotte Sunday night). The kayaking company drops you off 5 miles up the river and you kayak down on sit on tops. I wanted to bring my camera but Natalie advised against it. Good thing I didn’t because I flipped my kayak on the very first rapid. I have a very lovely and painful bruise on my shin to show for it. 😳

Overall, kayaking was fun and a great workout. The water was refreshing and the river was beautiful. I was starving when we finished (it took about three hours) and I was craving Your Pie for dinner before we headed home. Our friends, Drew and Natalie, started the Your Pie concept a little over two years ago. It has done so well – they already have three locations in Athens, a location in Charleston and more Georgia locations on the way very soon!

Your Pie is a really cool concept. It’s quick service brick oven pizza customized for the diner. You go through the line and choose from an existing combination or create your own. The dough and most of the sauces are homemade (and so good) and all of the toppings are high quality and fresh. It’s so cool to me that one or our friends started such a cool concept!

I went with The Hippy.

My pizza featured…a mix of traditional marinara and sundried tomato sauce, low-fat mozz cheese, artichokes, roasted red peppers, tofu, spinach, portobellos and fresh garlic…all on whole wheat dough (which is to die for – I want the recipe. Drew, I promise I won’t post it on the blog! 😉 )

And just because I love to show y’all the his/her comparison…

Brandon had The Lineage…mushrooms, sausage, banana peppers, olives and pepperoni on traditional white crust. Sullie sat on the patio with us and was very interested in the pizza!

I had to finish my meal with some of Your Pie’s awesome gelato.

Pistachio and strawberry. Mmm…..

Then we had to hit the road for our three hour drive home. Boo.

I taught BodyPump this morning and then came home for a bowl of oatmeal. I’d been waiting for this all weekend.

1/4 cup oats, 1 tablespoon Bob’s Red Mill 10-Grain Hot Cereal, 1/2 cup almond milk, 1/4 cup water, chia seeds, raisins, cinnamon and half a banana. Topped with almond butter and Crofter’s.

I went to an insanely hot and intense 90 minute hot vinyasa class with Celeste at Y2 this morning. I never get to go to Celeste’s classes because our schedules are opposite but since I’m off the next few days I wanted to take advantage and get a class in. It was seriously the hardest class I’ve been to in a very, very long time.

I grabbed lunch at Earth Fare on the way home from yoga.

Hummus, homemade pita chips (brushed whole wheat pita with olive oil, sprinkled with fresh herbs and sea salt and baked on 400 for about 10 minutes), grapes and cucumbers.

I spent a while menu planning this afternoon and then headed to the pool. It was hot but I managed to get a lot of reading in and a 30 minute nap. Success.

I was excited about tonight’s dinner. I cut this recipe for Grilled Tuna with White Bean and Charred Onion Salad out of Cooking Light in 2007. I’m glad I finally got around to making it because it was delicious.

I will be blogging about this recipe soon on Bakin’ and Eggs. It was everything I hoped it would be. The bean and onion mixture was perfect and I always love tuna.
