Dragon Fruit

Sunday was a day full of adventure. (Catch up on what happened Saturday night – including my car break in – here.) The adventure started when my mom announced that she picked up a funny looking fruit at the Dekalb Farmer’s Market. Enter dragon fruit.

We Googled it and found that it’s native to Mexico and Central and South America. It’s also widely grown in Southeast Asia and also known by the name pitaya. It’s described as a cross between a kiwi and a pear.

We cut the dragon fruit in half and were excited to see the beautiful interior of the fruit.

The next step was scraping/spooning out the insides using a spoon. I worked my way around the edges and it easily scooped out of the pink skin.

And finally I diced it and placed it back in the skin for a pretty and fun presentation. We all enjoyed trying this new fruit and I think it would be beautiful as part of a fruit spread at a party.

Then came waffles and uncured applewood smoked bacon (also from the Dekalb Farmer’s Market).

My dad makes the best waffles. I love being home with my family and being treated to homemade breakfast in the morning that I didn’t cook! 😉 Memories…

After breakfast, Brandon and my dad cleaned the glass out of my car and we made a million phone calls to glass repair companies. We finally found one place open on Sunday that could install a new window for me before Brandon and I headed back to Charlotte. We loaded up the car and Sullie and headed waaayyy down Buford Highway to get the window fixed. It was quite an experience but totally worth it to not have to deal with the window being down for our four-hour trip back to Charlotte (it rained and it was like 90 degrees).

Brandon stopped at Arby’s for lunch. I opted to reach to the backseat and pulled out peanut butter sandwich supplies.

Not just any peanut butter sandwich but freshly ground peanut butter on Cranberry Orange Walnut Bread – all from Dekalb Farmer’s Market. Yum!

A Starbucks stop was totally necessary.

I ordered a tall Cafe Vanilla Frappuccino Light and was so excited to find out it had less than 150 calories. A great treat.

We finally arrived back in Charlotte and I ran to the grocery store. We decided to grill steaks and vegetables.

I don’t eat steak often (like hardly ever) but this one was awesome. Brandon grilled ribeye on the Big Green Egg and topped it with blue cheese. Grilled zucchini, squash and mushrooms on the side, as well as Roasted Spiced Sweet Potatoes.

I taught BodyPump this morning and then came home and made a bowl jar of oatmeal.

Jars are perfect vehicles to get oatmeal to work. Same combo I’ve been loving with bananas, blueberries and peaches.

Lunch today was a hummus plate.

Toasted whole wheat pita, sliced roma tomatoes (from a co-worker’s garden), grapes and hummus.

I met up with Brandon for a yoga class tonight and then whipped up Emily’s vegan black bean burgers for dinner. (Coincidentally, I saw Emily at yoga and told her I was excited to finally make her “famous” black bean burgers.)

Which we made un-vegan by adding cheese. They were great! Looking forward to having a leftover burger on a salad for dinner tomorrow night.

It is so late and I have an early wake up call for more fun with ashtanga in the morning. Busy, busy, busy week.
