Trip Excitement (and Craziness!)

We are working fast and furious over here to get ready for our trip to DC.  I’m taking a half day and we’re flying out tomorrow afternoon. I am so ridiculously excited – this is my first trip to DC. We have friends getting married Saturday but we’re flying up early for a fun long weekend and some site seeing.

My to-do list after work looked a little like this: home > run  > bathe Sullie > shower > yoga > clean bathrooms > cook dinner > shower again > eat dinner > clean kitchen and make breakfast for tomorrow > pack > paint fingernails and toes > blog > bed.

Whew…my head is spinning and I am tired but we’ve accomplished a ton tonight. All of the cleaning is in the mix because my sister in law’s boyfriend has agreed to house sit and watch Sullie for us this weekend. I am so happy that we don’t have to board her!

The past few days have been busy, busy. Work is really picking up and we’ve had so much to do this week. I haven’t updated you guys on eats + workouts since Monday dinner so here is a quick recap.

Tuesday morning I had to use every single ounce of my willpower to get myself to ashtanga at 6 a.m. Of course once I was there I was so happy to practice but it was not easy to get there. I enjoyed a bowl of overnight oats at my desk when I arrived at work.

Lunch was breakfast #2.

I made an egg scramble with two eggs, cherry tomatoes, squash, zucchini, sundried tomatoes, spinach and feta. On the side I had Cranberry Orange Walnut toast.

I had a client meeting Tuesday afternoon and stopped to pick up a refreshing drink after the meeting on my way back to the office.

My favorite drink of the summer – Honest Green Dragon Tea. Love this stuff – it’s just barely sweetened and only has about 60 calories per bottle.

Dinner was leftover black bean burgers over a salad.

Baby greens and baby spinach, cherry tomatoes, mozzarella cheese, cucumbers, avocado, carrots and a black bean burger topped with homemade honey mustard. For the honey mustard I just whisked together plain Greek yogurt, honey, Dijon mustard and teeny bit of olive oil.

I considered running this morning but sleep won. I was working on several nights with only 5-6 hours of sleep and I really needed to get 8 hours in. Sleep is so necessary for your body to recover and repair from workouts and I knew I hadn’t been getting enough. Instead of running, I slept until 7:30. It was wonderful. I made oatmeal for breakfast and ate it at my desk.

Lunch today was a veggie sandwich.

Arnold Whole Wheat Sandwich Thin with light cream cheese, cucumbers, tomatoes, avocado, squash, feta and spinach. Green grapes on the side.

My snack this afternoon was the new Carrot Cake Larabar. I have been dying to try it and finally found it when I picked up my Honest Tea yesterday at Healthy Home Market. I read some reviews on other blogs that it was similar to the Tropical Fruit Tart flavor but I thought that it was really different and so delicious. You could actually see the carrots in it. Yum! I went for a quick run when I got home to get my “easy run” out of the way. I was supposed to run 2 miles at a 10:09 pace but instead I ran 2.22 miles in 18 minutes. What can I say, I had some energy to burn. After my quick run I went to a hot vinyasa yoga class. I really wanted to get one last class in before leaving for our trip.

Dinner tonight was late but awesome.

Pasta with vodka sauce (I subbed a bit of half and half for the heavy cream and added spicy chicken sausage), salad and wine.

Let’s take a closer look to appreciate the deliciousness of this pasta.

I topped it with parmesan cheese and fresh basil from the herb garden. Mmmmm….so hit the spot tonight.

Off to zip up the suitcase and get in bed. I just can’t hang with these late nights!

This time tomorrow I will be in DC!!! 😀
