It seems that I’m not alone in my love for hoodies. Many of you also commented that they’re a staple in your winter wardrobe. So cozy!
Today’s post is all about the food. Lots of good eats in the last couple days.
Last night’s dinner was easy and delicious.
Parsnip and sweet potato puree with roasted asparagus and baked mahi mahi. I seasoned the mahi with a mix of Dizzy Pig’s Shakin’ the Tree and Ragin’ River. Their rubs are the best and have so much flavor! Brandon and I both loved this dinner.
Skipping ahead to today’s lunch…
I cut a slice of Great Harvest Honey Whole Wheat into fourths (because it was tearing when I took it out of the bag!) and topped them with hummus, mashed avocado, sprouts, spinach and pepper jack. Goldfish, pear slices and baby carrots on the side.
My snack today was outstanding.
Plain Greek yogurt and a sprinkle of granola in a nearly empty Trader Joe’s Pumpkin Butter jar. Yummm…..
I had a run planned tonight and was seriously not feeling it when I left work. Luckily, I received a motivating Tweet from Genevieve and channeled my Cold Weather Running post about attitude and got myself out on the road. Sullie and I ran 4.2 miles in 37 minutes. I’m so glad that I got the run done – it felt amazing!
The temperature was around 50 degrees and it was dark so this is the ensemble I put together. I was comfortable the whole time. I probably could have used some gloves but I wasn’t miserable without them.
And just to show you the effectiveness of the reflective vest…
GET ONE! Do not run in the dark without one.
Dinner tonight was Vegan African Coconut Curry Soup.
It was a mixture of red bell pepper, tomatoes, onions, curry powder, chickpeas, vegetable broth, coconut milk and brown rice. I will be sharing the recipe on Bakin’ and Eggs once I get a natural light shot of it. I loved this soup.
And speaking of Bakin’ and Eggs, tonight I posted a recipe for Cranberry Coffee Cake with Streusel Topping. When people ask me why I don’t combine my two blogs – this recipe is case in point of why that will never happen. 😉
