Mile High Peanut Butter Pie

Happy weekend!

Last night  Brandon and I decided to finally use a Groupon we’ve been holding onto for a while and try Savor. I was looking forward to finally experiencing Savor after reading good reviews and constantly hearing the Twitter-verse talking about how good their food is.

I knew it was going to be good as soon as we walked in the door to a cozy atmosphere and rocking special board.

I immediately zeroed in on the Mile High Peanut Butter Pie. (Yes, it is perfectly acceptable to plan your dessert before ordering your meal. 😉 )

They had a nice menu with a mix of salads, sandwiches and entrees. I decided to go with the Sweet Chili-Glazed Salmon.

It was served on top of a root vegetable hash with a side of Asian satuteed veggies. I loved this salmon and we definitely want to try to recreate it. Even my salmon-hating husband kept sneaking bites! Our server was so nice and tried to explain the preparation method to me but he did admit that he’s never been able to perfectly replicate it at home.

After I became a member of the clean plate club (did anyone else’s parents/grandparents say that growing up?) it was time to order dessert. And then this amazing slice of pie appeared at our table.

Another “must replicate at home as soon as humanly possible.” There are no words for the deliciousness of this pie. All of Savor’s desserts are homemade and looked amazing. We will definitely be visiting Savor again!

Before we went to Savor I splurged and got a manicure and pedicure. I will spare you from a before shot of my feet but let’s just say the situation down there was no good after the marathon!

It was a great way to unwind from a very busy week at work. I went with the darks and grays which Brandon hates but I love.

I woke up naturally at 7 a.m. this morning. I seem to be losing my ability to sleep in but I guess when you get up most days of the week at 5 that 7 is sleeping in?

Since I was up so early I decided to finally try the steel cut oats that have been sitting in my pantry for a while. They take a lot longer to cook than regular oats.

They were different…much thicker and chewier than normal oats. Here’s how I cooked them.

1/2 cup steel cut oats
1 cup water
1 cup milk or almond milk
1/2 apple, diced
Cinnamon
Pinch of salt
1/3 cup pumpkin puree
Drizzle of maple syrup

Combine oats, water, milk , apples, cinnamon and salt  in a medium saucepan and bring to a simmer. Cook for about 30-40 minutes, stirring every now and then. Mix in pumpkin and a drizzle of maple syrup at the end. Two servings.

I topped mine with Crofter’s, Trader Joe’s Pumpkin Butter and almond butter.

I was on the fence about running today. I want to get 8-10 miles in this weekend but I have my ashtanga workshop this afternoon. I decided just to take Sullie out for an easy 5K and wait on the long run until tomorrow. It was so beautiful out this morning and we both enjoyed the easy run…although Sullie is feeling a little tired now!
