My alarm went off at 5 a.m. this morning and I peeked out the window to discover this (but imagine it in darkness):
The snow that was predicted happened. About 15 minutes later I received a phone call from my supervisor at the Y that my 6 a.m. class was cancelled. I went back to bed and woke up again at 7:30 to discover that my office was open but we had the option to work remotely.
Given that our street looked like this…
…and nothing in our neighborhood had been plowed, I opted to work from home. I had moments of guilt and contemplated going in but after a quick poll of road conditions on Twitter, decided against it. The risk was just not worth it.
I had a bowl of “snow oats” for breakfast.
I couldn’t think of anything I wanted to eat more than a hot bowl of oatmeal. This bowl was featured apples and cinnamon.
I worked through the morning and then Brandon, Sullie and I went on a walk during my lunch break.
Snow days are Sullie’s favorite. ๐
The only unfortunate thing is that Sullie’s fur is so long in places that huge snowballs hung off of her paws and legs and made her uncomfortable. I had to melt them with a warm cloth when we got home.
She didn’t let it slow her down for most of our walk though!
I felt good about my choice not to drive in to work today when I spotted this on the streets while we were walking.
Ice. Apparently, it’s supposed to get even worse tonight but I’m keeping my fingers crossed that it’s not as bad as they’re expecting. I really need to get to work tomorrow and would love to make it to yoga.
Sullie has been passed out all night after her big day in the snow. She went to bed super early!
She makes me so happy! ๐
I made a quick lunch after our walk before jumping on some calls this afternoon.
Great Harvest Dakota with mashed avocado, a smear of light ranch, spinach and colby jack. Cherries on the side.
I was in the mood to bake this evening before dinner and whipped up a batch of Oatmeal cookies with chocolate chips, coconut and pecans.
Brandon’s favorite cookie combo is oatmeal chocolate chip so I decided to put a twist on them today by adding coconut and pecans.
I loved the addition of the coconut. These were awesome – super moist and chewy.
We played Scrabble in front of the fire before dinner but both of us were having a hard time focusing. We had terrible letters and the board just wasn’t going anywhere. Hate when that happens. I also got extremely distracted by the Eric LeGrand story on ESPN during the national championship pre-game. If you haven’t heard about him, you must read about his story. Amazing proof of what a positive attitude and a fighting spirit can do for healing.
Soon enough it was time for dinner. Unsurprisingly, Brandon requested chili in honor of snow day and the national title game. I made a batch of my standard beef chili for him and defrosted some veggie chili for me.
I had a major craving for cornbread with honey and made some to go with dinner.
I tried a new recipe tonight and I think it is the best plain cornbread that I have ever made. The texture was perfect – fluffy and delicious.
Even better topped with butter and honey!
