Pasta and Photos

Help! I got home from yoga teacher training tonight to find Brandon surrounded by old pictures. We had a few things in storage that we had to pick up today. One being a large box of photos.

He’s been entertaining himself all night with my large collection of photos from middle, high school and college. Yikes. There are some embarrassing pictures in there! 😳

He did earn major bonus points by having dinner waiting when I got home. He stopped by Pasta Provisions today to pick up fresh tortellini and foccacia.

Gorgonzola foccacia with olive oil and an herb dipping mixture.

And cheese tortellini with pomodoro sauce and a salad on the side.

So yoga teacher training was interesting tonight. First, we practiced ashtanga. My practice was only so-so.  It just didn’t feel right – everything required a ton of effort. I don’t know if it was due to being sore/tired from teaching BodyPump last night or due to the fact that I just prefer to practice ashtanga in the morning. Anyway, hopefully tomorrow’s practice will be better.

Second, we watched the movie “What the Bleep Do We Know?” According to Wikipedia, it  “is a 2004 film that combines documentary-style interviews, computer-animated graphics, and a narrative that describes the spiritual connection between quantum physics and consciousness.” It was interesting to say the least. Has anyone seen it? I think I’d have to watch it five more times to even begin to absorb what they’re trying to address.

Lunch today was unexpectedly delicious.

I realize that I have an open faced sandwich problem. It’s not that I don’t like putting a second piece of bread on my sandwiches but ever since I started buying Great Harvest breads, I find that I prefer just one slice on my sandwiches (they’re just more filling and calorie dense). At least the open faced sandwich makes for a pretty picture! 😉 This new combination featured Great Harvest Whole Grain Goodness, hot peach jam, tofu, spinach and brie. Yummm….

I had a little extra time to cook breakfast this morning so I decided to give steel cut oats another try.

And I’m still not a fan. I missed the softness and creaminess of my rolled oats. I just don’t love the texture of these. Everyone keeps telling me to try cooking them overnight in a slow cooker to get soft, fluffy oats but that’s a lot of effort so we’ll see.

And a very quick overview of yesterday’s eats.

I made green coconut curry after teaching BodyPump (which was so fun last night – two of my co-workers came to my class for the first time!).

Tofu, red peppers, green peas, purple potatoes and spinach in a green coconut curry sauce over rice. Vegan and tasty!

(Sidenote: I have been trying to increase my weights when I teach BodyPump to be a better role model for my participants and I am really feeling it! It’s so good to push it and mix it up sometimes. A reminder to challenge yourself with your weights and try to increase sometimes and not stay with what you always do!)

Lunch yesterday will be a big surprise…

Or not! A Trader Joes veggie burger Great Harvest Whole Grain Goodness with spinach and cheese. Are you missing the avocado this week? I am! I bought one at Trader Joe’s Tuesday but it has taken all week to ripen. Boo.
