Weekend Part Two: Good Friends and Good Food

We’re back home in Charlotte after a wonderful weekend in South Georgia with our friends. I so needed this time with them. I feel so happy, recharged and relaxed. Saturday was a perfect day full of good food, beautiful weather and chatting.

Cristen had a nice lunch planned of white bean soup with roasted red pepper tapenade on crostini. The recipe was from Williams-Sonoma.

The crostini was not only delicious but colorful with great presentation. I think this would be a great appetizer – not just good with the soup!

The soup was healthy and hearty. It got its thickness from pureeing the white beans. I love it when recipes use this method rather than adding cream.

We spent the afternoon sitting outside on the patio. It was an amazing day and everyone enjoyed the weather – dogs and babies included!

One of Cristen’s friends came over with her two-month old baby and swing time helped him stay happy. Camille wanted to be right in the action with the baby. She loved him!

A power walk around the neighborhood was the perfect way to end the afternoon before we came in to start dinner. We had fun cooking dinner together.

The girls had grilled salmon with mediterranean quinoa and sauteed spinach.

And giant ribeyes for the boys!

Cristen made this Chocolate Icebox Pie from Southern Living for dessert and it was out of this world. I thought my peanut butter pie last week was good…this might have been even better. YUM!!!

Cristen is such a good cook. We were spoiled all weekend!

I slept another solid nine hours last night. I don’t think that I woke up one single time until 8:30 this morning. It was so necessary. We were on babysitting duty while Cristen and Graham went to church.

Camille was very entertained by the dogs playing. She wanted to get right in the middle of everything and kept giving them toys and saying, “play puppies.”

The dogs didn’t need much encouraging to continue their playing. Tug of war has always been their favorite game.

Camille thought it was the greatest thing ever!

Breakfast was overnight French toast…similar to this recipe.

I topped mine with bananas and maple syrup and then added some peanut butter after I took the picture. I just couldn’t help myself. 😉

I’ll update you guys on the rest of today in my next post. It involved a trip to the Y with Brandon, a new awesome elliptical machine and sushi.

Does anyone have tomorrow off for President’s Day? I wish I did. It’s going to be such a crazy week at work. Yikes!
