80 Degree Friday

I’m glad that you enjoyed the fun facts/getting to know me post! It was fun to write!

Let’s quickly catch up on what I’ve missed the last couple days since I haven’t updated on food + workouts.

Thursday morning started with an ashtanga practice. It took some serious motivation to get myself out of bed. My studio has changed the format of Thursday morning ashtanga. We no longer have a teacher (the classes just weren’t big enough) so everyone just practices on their own and helps each other out. It takes a little more discipline to get through my early morning practice when I know there is no watchful eye!

Overnight oats at my desk when I got to work. I had errands to run over lunch so I packed a salad to take back to work with me.

Spinach, avocado, apples, strawberries, shredded cheese, almonds, dried cranberries, carrots and balsamic vinaigrette. I also had a Pure Cherry Cashew bar before I taught BodyPump.

Class was really fun. We had a smaller crowd (due to many forgoing workouts for St. Patrick’s Day happy hour – bad BodyPumpers!!!) but worked super hard.

We had a soba noodle bowl on the menu for dinner.

Soba noodles are a great source of vegetarian protein as they contain all eight amino acids. This was a great dinner – full of flavor, healthy and pretty easy. I blogged the recipe on Bakin’ and Eggs – Spicy Soba Noodles with Edamame, Mushrooms and Cabbage – so check it out.

Hold on to your hats here…I switched up breakfast this morning.

Plain Greek yogurt with granola and fresh fruit. Yep, no overnight oats or oatmeal! This used to be one of my favorite breakfasts and I was craving it now that the temperatures are creeping back up. The high in Charlotte today was 80 degrees!

I had to run an errand on my lunch break so I stopped by Common Market to pick up a wrap.

This wrap looked so pretty but it tasted like nothing. It was so boring. Bummer. There was a bright spot in my lunch though!

A kombucha!

I mentioned the amazing weather we had today – it was 80 degrees and sunny. I was dying to run but had yoga teacher training at 6 p.m. I couldn’t get running out of my mind so I bolted out of work at 5 on the dot, went home and threw on some running clothes, grabbed Sullie and headed out for a quick two miles. It was all I had time for but at least I got something in!

I was in a huge rush to get to the studio and my stomach was grumbling. I don’t like to eat right before I practice so I did what any runner turned crazy yogi would do…

…And ate a Gu! I’m not going to lie – I really enjoyed this. It’s been way too long since I’ve had one!

Yoga tonight was a bit of surprise. Class started and I thought to myself, “hmm…why is the music so slow and why are we not picking up the pace?” I soon learned that we were going into a long, slow, deep class. In these classes you spend a short amount of time warming up with standing postures before you move to the floor for long holds. You hold poses for upwards of five minutes. It kills me. I really dislike long, slow, deep. I have a hard time staying in the poses because I get bored and want to move. Anyway, I survived class tonight and my body will be extra rested for super flow in the morning! 😉

We watched another documentary tonight, Ashtanga New York.

“Ashtanga, NY was originally intended as a concert film celebrating the Ashtanga style of yoga, now wildly popular in the United States and around the world. It follows the aging yoga guru Sri K. Pattabhi Jois as he gives his final North American workshop in New York City in September 2001. Devotees were arriving from all over the world to partake in a rare opportunity to practice with the 86 year-old Jois. The 9/11 terrorist attacks took place in the midst of this celebration, and dramatically changed the meaning and purpose of this yoga gathering. In the difficult weeks that followed, Jois used the Ashtanga practice to help heal and fortify his diverse followers.”

I really enjoyed the film.

Dinner tonight was the last of the leftover tamale pie.

This is one of those dishes that just keeps getting better in the fridge. These leftovers were delicious! I topped it with plain Greek yogurt, salsa and hot sauce and had a small side salad.

It’s nearing midnight and I have to be back at the studio at 7:30 a.m. tomorrow.

Have a great weekend! What are you guys doing? Anyone doing a long run or racing? Any other fun workouts or cooking projects planned?

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
