Salad and Pancakes? Works for me!

In general, I would say that I’m a pretty normal eater. I’m not big on weird combinations and I’m not very picky. But there are days when a little randomness makes its way into my meals.

Take Sunday, for example.

It started with a plain bowl of oatmeal. For most people this is not weird but for those of you who read my blog you will notice the absence of mix ins, nut butter and jam. I was feeling plain and simple – oats, salt, cinnamon, almond milk, water, brown sugar and a sprinkle of chia seeds, because I just couldn’t help myself.

This was just the breakfast I needed to fuel me through teaching a 90 minute hot yoga class. I wasn’t sure how I would like teaching on Sunday mornings but I’m finding that it’s my favorite class. I just love the vibe in the room and having 90 minutes to really get everything in.

After class I came home and got a quick three miles in (8:20 pace!!!) before getting ready for a photo shoot for my instructor bio on Y2 Yoga’s website. Here is a sneak peek…I will post more later!

The shoot was with Wanda June Koch who is the guru in Charlotte for beautiful portraits and she does a phenomenal job with anything related to yoga/dance/movement. This was my second time working with Wanda (the first was for the Lululemon shoot a few weeks ago) and she is just amazing!

I booked it back to the studio after the shoot to practice in the afternoon hot class but things didn’t really go as planned. I unrolled my mat and my mindset kind of shifted. I just didn’t want to be there. At all. I was tired, hungry and wanting to be home with Brandon. Normally, I would tough it out but 20 minutes into the 90 minute class I decided to quit fighting with my mind and get out of there. Best decision I made all day. I came home and spent the afternoon cleaning and organizing and as a result I feel 100 times more sane.

So back to the subject matter that I started this post with…we decided to have pancakes for dinner but I was feeling extreme guilt for not having any vegetables during the day. So I made a salad.

And then I ate pancakes!

I used this recipe but subbed half whole wheat flour and added blueberries.

Salad + Pancakes = awesome Sunday night dinner! 😀

And a quick look at today’s eats because they were just super tasty and we can’t miss out on them.

Breakfast at work after teaching BodyPump was apple cinnamon oatmeal in a nearly empty Trader Joe’s peanut butter jar. Mmmm….

Lunch at home was a salad with spinach, mixed greens, dried fruit, almonds, carrots, grape tomatoes, feta and chickpeas. Honey dijon lemon vinaigrette.

Afternoon snack was green tea and Greek yogurt.

And finally, a late dinner after subbing a hot yoga class tonight. Herbs de Provence Chicken with Orzo – so easy and so delicious! I posted the recipe on Bakin’ and Eggs.
